THE ORIGINAL WALDORF SALAD
"Millions who never visited the Waldorf owe him a debt," The New York Times wrote in 1950, upon Oscar Tschirky's death. Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens. Over time, variations would include blue cheese, raisins and chopped walnuts, which can be added here alongside the celery and apples. But the original is an exercise in simplicity: four ingredients that have lived on for over a century.

- Peel apple and cut into halves. Remove core and slice halves 1/4-inch thick. Reserve 4 slices. Cut remaining slices into thin strips.
- In a medium bowl, mix celery, mayonnaise and apple strips; season with salt and pepper to taste. Arrange on lettuce and top with apple slices.

CHEF JOHN'S WALDORF SALAD
A fruit salad has to be pretty darn good to actually get a name, and the venerable Waldorf salad is certainly worthy. Embellish this as you see fit, but I really like it best with just the four ingredients seen here. Things like dried cranberries can add a nice seasonal touch but, for me, the chewy fruit gets in the way of that addictive crunchy/crisp texture.

- Whisk mayonnaise, creme fraiche, lemon juice, tarragon, sugar, salt, black pepper, and cayenne together in a bowl.
- Place apples, celery root, grapes, and walnut pieces in a large bowl. Toss with about 1/2 cup of dressing. Add more dressing until salad components are well coated but not swimming in dressing. You might not need all the dressing.
- Serve immediately or cover and refrigerate for up to 24 hours.

CURRIED WALDORF SALAD
Try this version this year instead of the traditional Thanksgiving salad. The original Waldorf salad combined celery, apples, and mayonnaise. Gradually walnuts and raisins were added to the mix. This version is not made with the gloppy mayonnaise we associate with Waldorf salad, but it has the same sweet, savory and crunchy mixture of celery, apples, raisins, and walnuts. Slice the apples and celery thin for a more elegant salad.

- Mix together the lemon juice, yogurt, mayonnaise, curry powder, cumin, and salt. Set aside.
- Cut the apple into 12 wedges. Cut away the core of each wedge and slice into thin crosswise slices. Toss in a large bowl with 2 teaspoons lemon juice. Add the remaining ingredients and toss together.
- Shortly before serving toss the salad with the dressing.

WALDORF SALAD

- Whisk together the yogurt, mayonnaise, lemon juice, salt and pepper until smooth. Add in the Poached Chicken, celery, grapes, raisins and apples. Mix until the salad is coated in the dressing. Line the bottom of four serving bowls with 3 leaves lettuce. Divide the salad evenly among the bowls, over the lettuce. Sprinkle the walnuts on top of the salads and finish with the chives to serve.
- Place the celery, onions, carrots and wine in a large saucepot set over medium-high heat. Bring to a simmer and cook until the liquid reduces by half, 5 minutes. Add the chicken, and then pour enough stock to cover, adding more if needed. Bring to a simmer and cook until the meat falls off the bone, 30 to 45 minutes.
- Remove the chicken to a baking sheet and cool. Strain and reserve the broth for another use, like a soup or sauce. Cool the chicken, then shred the meat.

- Add celery, grapes, walnuts, and raisins.
- For dressing--------------.

- Drain pineapple, reserving the juice. Set pineapple aside. In a saucepan, combine juice with sugar, eggs and salt. Cook, stirring constantly, over medium-low heat until slightly thickened. TRUFFLED WALDORF SALAD
Served at the Waldorf=Astoria Hotel, this is a classic. If you can't find truffles use truffle oil and drizzle it over the salad. Enjoy! And now a little history: On March 24, 1893, millionaire William Waldorf Astor opened the 13-story Waldorf Hotel on the site of his former mansion, at Fifth Avenue at 33rd Street. Built by renowned architect Henry Janeway Hardenbergh, the Waldorf was the embodiment of Astor's vision of a grand hotel, complete with electricity throughout and private bathrooms in many guest chambers. Four years later, the 17-story Astoria Hotel was erected on an adjacent site by Waldorf's cousin John Jacob Astor IV. The corridor built to connect the two buildings became an enduring symbol of the combined hotels. It is represented by the equal sign in the Waldorf=Astoria name. In 1929, after decades of hosting distinguished visitors from around the world, a decision was mad to tear down the original Waldorf=Astoria in order to erect the Empire State Building and pave the way for a reincarnation 15 blocks north on Park Avenue. When it opened on October 1, 1931, the Waldorf=Astoria was the world's largest and tallest hotel, a veritable city-within-a-city. President Herbert Hover himself delivered the radio broadcast message of congratulations upon its opening. The Empire Room, once the premier entertainment club in New York, helped launch the careers of Diana Ross and Frank Sinatra. The first major film to feature a hotel was Weekend at the Waldorf, staring Ginger Rogers. It was the first hotel to be included in the lyrics of a Broadway show - Cole Porter's You're the Top, featured in Anything Goes, proclaims, "You're a Waldorf Salad". The hotel became the residence of three five-star generals; Dwight Eisenhower, Douglas MacArthur and Omar Bradley.

- Thinly shave the fennel and place in a bowl of ice water.
- In a large bowl, combine the mayonnaise, crème fraîche and lemon juice. Add apples, celeriac and truffle; toss gently until well coated.
