What's more, it makes a great meal all year round. If you want to eat this delicious sandwich for lunch at work, or as a healthy school lunch, pack the filling and bread separately and sandwich just before you eat it to stop the bread going soggy. Did you know: Walnuts are a nearly perfect package of protein, healthy fats, fibre, plant sterols, antioxidants, and many vitamins and minerals. Walnuts like Tuna are a great source of Omega 3 oils. The two most common major species of walnuts are grown for their seeds - the Persian or English Walnut and the Black Walnut. The English Walnut (J. regia) originated in Persia, and the Black Walnut (J. nigra) is native to eastern North America. The Black walnut is of high flavour, but due to its hard shell and poor hulling characteristics, it is not grown commercially for nut production. 1 can (7 ounces) tuna, drained and flaked
1 hard-boiled large egg, chopped
1/4 cup chopped celery
1/4 cup mayonnaise
2 tubes (8 ounces each) refrigerated crescent rolls
1-1/2 cups shredded cheddar cheese

Steps:

  • In a small bowl, combine the tuna, egg, celery and mayonnaise; set aside. Separate crescent dough into eight rectangles; seal perforations. Top each with tuna mixture and cheese. Fold in half; pinch edges to seal. , Place on an ungreased baking sheet. Bake at 425° for 10-15 minutes or until golden brown.

2 tablespoons chopped walnuts, toasted
1/3 celery, chopped
1/3 medium carrot, grated
2 green onions, snipped
2 (6 ounce) cans light chunk tuna in water, drained and flaked
8 slices tomatoes

Steps:

  • Combine mayonnaise, mustard, lemon juice, vinegar, Old Bay seasoning, salt, and pepper. Add walnuts, celery, carrot, and green onions, mix well. Add tuna and mix evenly. Serve mounded over tomato slices. Garnish with shredded parmesan if desired.

1/3 cup fat-free mayonnaise
1/4 cup finely chopped celery
1/4 cup finely chopped walnuts
2 tablespoons finely chopped onion
1 tablespoon sweet pickle relish
1 teaspoon sugar
1 pouch (7.1 ounces) light water-packed tuna
1/2 cup chopped red apple
6 slices reduced-calorie bread, toasted
6 lettuce leaves

Steps:

  • In a large bowl, combine the first six ingredients; stir in tuna and apple. Spread 1/2 cup tuna mixture on three slices of bread. Top with lettuce and remaining bread.

Tuna Salad Sandwich with Apples and Walnuts image

This dish can be served as a sandwich filling or as a stand-alone salad accompanied by favorite lettuces and veggies. We use canned tuna packed in spring water because it's lighter than tuna packed in oil, and we make sure the apple is tart and crisp. Granny Smith apples are fine, but also Mutsu, Honeycrisp, or any good local crispy, tart apple will do. Add half the dressing at first and see if you need more-it's up to you how well coated you want the tuna and apples to be.

1/4 cup chopped walnuts
3/4 cup mayonnaise, homemade (page 284) or store-bought
2 teaspoons sugar
1 teaspoon cider vinegar
Kosher salt and freshly ground black pepper to taste
2 crisp, tart apples, such as Granny Smith, Mutsu or Honeycrisp, peeled, cored, and cut into 1/8-inch cubes
3 small cans (about 18 ounces total) canned tuna in spring water, drained and separated into chunks
6 tablespoons finely diced red onion
1/4 cup chopped fresh parsley
8 slices multi-grain bread

Steps:

  • Toast the walnuts in a small nonstick skillet over medium heat for 2 minutes, or until golden brown, stirring occasionally. Alternatively, roast the walnuts in a preheated 300°F oven for 10 minutes, or until they smell toasted. Remove the walnuts to a plate and set aside to cool.
  • Whisk together the mayonnaise, sugar, and cider vinegar in a small bowl. Add salt and pepper to taste. Adjust the seasonings as needed.
  • Combine the walnuts, apples, tuna, red onion, and parsley in a bowl. Toss with half the dressing. Add more dressing, if desired.
  • Spread the salad over 4 slices of bread. Top with the other 4 slices. Cut each sandwich in half, and serve.
