THIRTY-MINUTE BAKED TUNA BURGERS
This is a dish my parents used to be able to make in a half hour when we were children. I added a few additions to make it a little more exciting and fairly low in fat. Serve on hamburger buns with traditional hamburger condiments if desired.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Spray a baking sheet with cooking spray.
- Mix tuna, egg, bread crumbs, garlic salt, and black pepper and fold in diced tomatoes and onion. Form the mixture into 4 patties and place onto prepared baking sheet.
- Bake in the preheated oven until burgers are golden brown and crisp, about 10 minutes per side.

MERMAID DELIGHTS (TUNA PATTIES / BURGERS)
These are nice and juicy - a great cheap meal. From Better Homes and Garden - when I was little my sisters and I used to eat them just because they are called "Mermaid Patties." :-) Simple, healthy, and great tasting.

Steps:
- If you'd like to, run your carrots through a food processor so they aren't identifiable in the finished patties.
- Blend all ingredients together in a bowl, and form 3-4 patties. Preheat your ovens broiler.
- Broil for 4 minutes on one side, flip, and broil for 3 minutes more. Add a slice of cheese if desired, and broil 1 minute more.

TUNA PATTIES
These tuna patties taste like crab cakes, and are easy to make. I like putting the patties on buns and topping them with pickled jalapenos... YUM.

Steps:
- Combine the tuna, bread crumbs, celery and mayo in a large bowl. Blend in the chili paste, lemon juice, and celery salt. Mix everything well.
- Form 4-8 patties, depending on how large you want them. Fry lightly in a sprayed skillet over medium heat about 5-8 minutes, flipping once. Patties are done once they are well-browned.
