Full of flavor, this pierogi casserole is nothing short of rich and hearty. It's a wonderful change from the usual humdrum casserole.

5 medium (2-1/4" to 3" dia, raw)s potatoes, peeled and cubed
½ cup milk
½ cup butter, melted
½ pound bacon, diced
1 onion, chopped
6 cloves garlic, minced
½ (16 ounce) package lasagna noodles
2 cups shredded Cheddar cheese
salt and pepper to taste
1 (8 ounce) container sour cream
3 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the potatoes in a large pot with water to cover over high heat. Bring to a boil and cook until the potatoes are tender. Remove from heat, drain, then combine with the milk and 6 tablespoons of butter, mash and set aside.
  • Melt the remaining 2 tablespoons of the butter in a large skillet over medium high heat. Saute the bacon, onion and garlic in the butter for 5 to 10 minutes, or until the bacon is fully cooked.
  • Cook the lasagna noodles according to package directions and cool under running water.
  • Place 1/2 of the mashed potatoes into the bottom of a 9x13 inch baking dish. Top this with 1/3 of the cheese, followed by a layer of lasagna noodles. Repeat this with the remaining potatoes, another 1/3 of the cheese and a layer of noodles. Then arrange the bacon, onion and garlic over the noodles, then another layer of noodles, and finally top all with the remaining cheese. Season with salt and pepper to taste.
  • Bake, uncovered, at 350 degrees F (175 degrees C) for 30 to 45 minutes, or until the cheese is melted and bubbly. Serve with sour cream and chopped fresh chives.

24 frozen potato and cheddar pierogi
2 teaspoons canola oil
2 celery ribs, chopped
1 medium onion, chopped
2 (6 ounce) cans tuna in water, drained
2 (10 3/4 ounce) cans low-fat cream of mushroom soup
1 tablespoon reduced-fat mayonnaise
6 slices low-fat cheddar cheese

Steps:

  • Preheat oven to 350.
  • With nonstick cooking spray, coat bottom of 9x13 casserole dish.
  • In a large pot over high heat, thaw pierogies in boiling water for 5 minutes.
  • Drain; place in prepared dish.
  • In large skillet, over medium-high heat, heat oil.
  • Add celery and onion; saute about 5 minutes, or until onions are softened.
  • Remove from heat; add tuna, soup and mayonnaise, stir until well mixed.
  • Spoon tuna mixture over pierogies in dish; place cheese on top.
  • Bake uncovered 45 minutes, or until hot and bubbly and cheese is melted.

1 teaspoon olive oil
1 medium onion, chopped
1 tablespoon minced garlic
1 tablespoon minced fresh basil
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup meatless pasta sauce
1 package (14 ounces) frozen potato and cheese pierogi, thawed
1-1/2 cups frozen chopped spinach, thawed and squeezed dry
1 large egg, room temperature, lightly beaten
1 cup frozen cubed butternut squash (about 5 ounces)
1-1/2 cups shredded part-skim mozzarella cheese
1/2 cup sour cream, optional

Steps:

  • Preheat oven to 350°. Line a 9x5-in. loaf pan with foil, letting ends extend up sides; grease foil., In a small skillet, heat oil over medium-high heat. Add onion; cook and stir until tender, 6-8 minutes. Add garlic, basil, salt and pepper; cook 1 minute longer. Remove from the heat., Spread 1/2 cup pasta sauce into prepared pan. Top with pierogi; press firmly. Top with onion mixture. Mix spinach and egg; spoon over onion mixture. Spread squash evenly over spinach; spoon remaining 1/2 cup pasta sauce over top. Sprinkle with cheese. Bake until bubbly and cheese is golden brown, 55-65 minutes., Let stand 10 minutes. Lifting with foil, remove from pan. Cut into slices. Serve with sour cream, if desired.

This recipe is inspired by Yooper's Awesome Pierogi Casserole (which truly lives up to its name!) recipe#47419 We love it, but DH loooooves cabbage pierogi, and I hate messing with lasagna noodles. So I modified it a bit to suit my family's requests....(and I cheat and use instant mashed potatoes, too)

1 package egg roll wrap
6 -8 cups mashed potatoes (I use instant to save time--garlic & butter is great)
2 tablespoons butter
3 tablespoons chopped bacon
1 white onion, chopped
2 tablespoons butter
1 (15 ounce) can sauerkraut
8 ounces shredded cabbage
1 chopped onion
1 teaspoon pepper
1 teaspoon salt
4 cups shredded cheddar cheese

Steps:

  • In a skillet, brown one onion in 2 tbs butter, add drained sauerkraut, shredded cabbage, salt and pepper.
  • Cook for 5 minutes.
  • Set aside.
  • In a separate skillet, cook bacon and onions to desired"doneness" (I prefer well-done).
  • Preheat oven to 350 degrees Spread 1/3 of the mashed potatoes in 9x13 baking dish.
  • Top with 1/3 of the cheese followed by a layer of egg roll wrappers cut to fit.
  • Top with bacon mixture, 1/3 of the potatoes, and 1/2 of the cheese, and more egg roll wrappers.
  • Spread cabbage-sauerkraut mixture over the this and top with egg roll wrappers.
  • Spread remaining potates, top with egg roll wrappers, and sprinkle with remaining cheese.
  • Bake at 350 for 30-40 minutes or until the cheese is melted and bubbly.
  • Serve with Sour cream.
