The lemon juice is optional as it's not traditional, but we strongly recommend it to brighten up the flavors of the final dish.

Two 6-ounce cans white meat tuna packed in water, drained
2 tablespoons minced celery
2 tablespoons minced red onion, soaked in cold water for 5 minutes and drained
1 teaspoon minced flat-leaf parsley
1/3 cup prepared mayonnaise
1 tablespoon whole-grain mustard
Freshly ground black pepper
Freshly squeezed lemon juice (optional)

Steps:

  • In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion and parsley. Add the mayonnaise, mustard and season with pepper, to taste. Stir to combine. Add lemon juice, to taste, if using.

1 small green apple, cored and finely chopped
1 carrot, finely chopped
2 ribs celery, finely chopped
½ cucumber, finely chopped
2 tablespoons red onion, finely chopped
1 tablespoon fresh dill
1 clove garlic, minced
½ cup olive oil
1 tablespoon apple cider vinegar
½ lemon, juiced
½ teaspoon sea salt
2 endive heads

Steps:

  • Place the tuna, apple, carrot, celery, onion, dill, and garlic in a large bowl and stir to combine, breaking up the clumps of tuna.
  • Add the olive oil, apple cider vinegar, lemon, and sea salt and stir well to combine, until the tuna has absorbed all of the oil.
  • Trim the ends off the endive, and separate the leaves. Serve each leaf with a scoop of tuna salad.

2 endives
1/2 of a red bell pepper
1/2 of a green red bell pepper
1/2 of a cucumber
1/2 of a tomato
1 tender onion
2 cans of solid light Isabel tuna in extra virgin olive oil
1/2 cup of cooked octopus

Steps:

  • First, dice all the vegetables. Make sure they are not too finely diced. Then add the pieces of octopus, tuna, and a pinch of parsley. Dress with a salt vinaigrette, a sherry vinaigrette and extra virgin olive oil. Let it sit in the fridge. It's recommended to let the salpicon cool off in the fridge, however, it will taste just as good if you decide to skip this step. Once the salpicon is ready, cut off the stem of the endives and peel. Once peeled, place the endives in a bowl and spread salpicon between the leaves. Lastly, add a few parsley leaves for presentation purposes.
