Steps:
- In a medium bowl, break up tuna with a fork. Toss with apple, onion, celery, capers and parsley. Add mayonnaise, mustard and lemon juice. Stir to combine.
- To make sandwiches, lay lettuce on bread and divide tuna salad and sprouts evenly.
TUNA SALAD SANDWICH
Steps:
- Drain tuna and add to a medium bowl. Seed and dice the cucumber; add to tuna. Add mayonnaise, relish, mustard, salt, and pepper. Mix well.
- Top 4 slices of bread each with a lettuce leaf and an even amount of the tuna salad mixture. Top with the remaining bread slices and cut in half.
- Serve sandwiches with sugar snap peas and apple slices on the side.

- Roast the brussel sprouts and bell pepper with za'atar, salt, olive oil and balsamic vinegar at 400°F for 25-30 minutes or more, depending on how charred you like your veggies.
- Once the veggies are roasted, take a salad bowl and mix the sprouts, bell pepper and canned tuna together. Then, mix together dressing ingredients and, once combined, toss salad in this.
- Fry a few capers and slivers of small onions and garlic in olive oil and add this on top of the salad.
- Finish the salad with a final dash of balsamic vinegar, toasted bread croutons, a sprinkle of fresh parsley, za'atar spice mix and red chilli flakes.

- Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop finely.

"PITA THE GREAT" - TUNA SALAD
I found this recipe in the "Looney Spoons" cookbook and it has become a family favourite. There are a few more ingredients than your standard tuna salad but it is well worth the extra time. An equivalent amount of chopped, cooked chicken breast may be substituted for the tuna with equally delicious results. My 9 yo DD, especially, loves these, so I send the components in her school lunch and she assembles it when she's ready to eat. I hope you enjoy!

- Combine tuna, red pepper, green onion and cilantro in a bowl.
- Whisk together the honey, lime juice, mayo, black pepper, hot pepper sauce, cumin and salt.

Steps:
- Take the cans of tuna and place them in a mixing both with water intact, do not drain.
- Chop red onion, celery, dill and sprouts.
- Place red onion, celery, dill and sprouts in tuna and mix with fork until tuna, and the other ingredients reach a paste type consistency.
- Mix in powdered mustard -- be sure all is mixed in evenly.
- Mix in dijon mustard -- be sure all is mixed in evenly.
- Taste -- make sure the ingredients are mixed to your liking -- add extra of dill, red onion, celery, powdered mustard or dijon if desired.
- Add dash of onion powder and McCormick Garlic and Herb powder (or McCormick garlic and dill powder, or plain garlic powder).
- Taste -- if desired put a few more dashes inches.
- Make sure is mixed evenly and put mayonnaise in -- if more is desired -- put more in! Put each teaspoon in separately so not too much or too little is put in -- I am not much of a mayo person so for me less is more :).
- Mix evenly and put on a sandwich with tomato and sprout or even melted with swiss cheese for a tuna melt! You can even toss with lettuce and tomatoes for a great salad!
