Turkey Cutlets with Balsamic Pears image

Pears cooked in balsamic vinegar and chicken broth add a rich sweet-and-savory note to this quick meal with turkey cutlets.

4 turkey cutlets (about 1 pound total), patted dry
Coarse salt and ground pepper
3 tablespoons unsalted butter
3 large shallots, thinly sliced (about 1 cup)
3 garlic cloves, minced
2 teaspoons chopped fresh thyme leaves, plus more for serving
3/4 cup low-sodium chicken broth
2 tablespoons balsamic vinegar
2 teaspoons grainy mustard
2 Bosc pears, cored and sliced into thin wedges

Steps:

  • Season turkey with salt and pepper. In a large skillet, heat 1 tablespoon butter over medium-high. Add turkey and cook until cooked through, about 2 minutes per side, flipping once. Transfer to a plate and tent loosely with foil.
  • Add 2 tablespoons butter to skillet and reduce heat to medium. Add shallots, garlic, and thyme; season with salt and pepper. Cook, stirring occasionally, until shallots begin to soften, 6 minutes. Meanwhile, in a small bowl, whisk together broth, vinegar, and mustard. Add pears to skillet and cook, stirring occasionally, until beginning to soften, 4 minutes. Add broth mixture; cover and cook 5 minutes. Uncover, increase heat to high, and cook, stirring occasionally, until pears are tender and liquid is almost evaporated, 3 to 5 minutes. Return turkey to skillet, along with any juices. Add thyme, toss to combine, and serve.

1 large onion, thinly sliced
1 garlic clove, minced
1/4 cup butter, melted
1/2 lb fresh mushrooms, diced
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 lbs turkey breast cutlets
2 tablespoons vegetable oil
1 tablespoon dried tarragon
1/2 cup chablis (or other dry white wine)
3 tablespoons fresh lemon juice
2 tablespoons fresh parsley, finely chopped

Steps:

  • Saute the onion and garlic in the melted butter in a large skillet over medium heat, stirring constantly, until almost tender. Add mushrooms, and saute, stirring constantly, until tender. Remove the vegetables from the skillet with a slotted spoon, reserving the drippings in the skillet. Set the vegetables aside.
  • Combine flour, salt, and pepper; stir well. Dredge the turkey in the flour mixture. Add oil to the skillet. Brown the turkey in the drippings and oil 2 minutes on each side; sprinkle with tarragon just before turning. Pour the wind and lemon juice over the turkey.
  • Add the reserved vegetable mixture, and simmer, uncovered, for 5 minutes or until turkey is done. Sprinkle with parsley and enjoy!

4 units turkey cutlets
0.25 teaspoons salt
0.125 teaspoons ground black pepper
2 units pears
1 cups chicken broth
0.25 cups dried tart cherries
2 tablespoons dijon mustard
0.25 teaspoons dried tarragon
9 ounces microwave

Steps:

  • 1. In 12-inch skillet, heat oil over high heat until hot. Sprinkle turkey cutlets with salt and pepper. Add cutlets to skillet and cook 3 to 4 minutes or until golden brown on both sides and they just lose their pink color throughout, turning over once. Transfer cutlets to plate.
  • 2. To same skillet, add pears. Reduce heat to medium-high and cook pears about 3 minutes or until browned, turning occasionally. Add broth, cherries, Dijon, and tarragon to skillet. Increase heat to high and cook 4 to 5 minutes or until sauce thickens slightly and pears are tender, stirring occasionally.
  • 3. Meanwhile, in microwave oven, cook spinach in bag as label directs.
  • 4. Return cutlets and any juices to skillet; heat through, spooning pear sauce over cutlets.
  • 5. To serve, spoon spinach onto 4 dinner plates. Top with turkey, pears, and sauce.

This is a lovely, quick recipe from a Good Housekeeping cookbook, with slight alterations to cook time/temp etc. It's extremely versatile; for instance, I had to use dried tarragon in place of fresh, and an onion in place of the shallot. It still came out great. Serve over noodles (but be aware that there is only enough sauce for two) and add garlic to your heart's content!

4 turkey cutlets
1 shallot, finely chopped
1 (4 ounce) package assorted sliced wild mushrooms
1/3 cup dry white wine
1 (15 -19 ounce) can condensed cream of mushroom soup
1 tablespoon chopped fresh tarragon leaves
1/4 teaspoon ground black pepper

Steps:

1/2 cup honey
1/2 cup tarragon vinegar
1/2 cup packed dark brown sugar
2 tablespoons black peppercorns
1/2 cup salt
6 tablespoons dried tarragon
1 onion, peeled and quartered
1 large or two small garlic cloves, bruised and peeled
1 lemon, cut into 1/4-inch slices
1 5 1/2-pound rolled turkey breast, tied at intervals to shape it like a sausage (ask your butcher to do this)
1/4 cup olive oil
1/4 cup fresh tarragon leaves

Steps:

  • In a very large casserole, roasting pan or plastic tub, combine honey, vinegar, sugar, peppercorns, salt and dried tarragon. Add onion, garlic, lemon and five quarts of water. Submerge rolled turkey breast in mixture, adding 1 to 2 more quarts as needed to cover breast with liquid. Refrigerate overnight, preferably for 24 hours.
  • Remove turkey from brine, and place on a rack for 30 minutes to drain and come to room temperature. Meanwhile, heat oven to 400 degrees. In a saucepan combine olive oil and fresh tarragon, and place over medium-low heat until oil begins to sizzle. Remove from heat, and allow to sit for 10 minutes.
  • Transfer tarragon from oil to a clean roasting pan. Pat turkey dry with paper towels, and place on top of tarragon. Pour oil over turkey, and rub by hand until meat is completely covered with oil. Roast for two hours. No basting is necessary.
  • Remove pan from oven. Transfer turkey to a sheet of foil, and allow it to cool for 20 minutes. Remove, and discard strings, wrap turkey in foil, and refrigerate until chilled, at least one hour. To serve, cut into slices.

1 teaspoon cornstarch
2 tablespoons lime juice

1/4 teaspoon seasoned salt

Steps:

  • Place pecans in a food processor; cover and process until ground. Combine the pecans, cheese, seasoned salt and dill in a shallow bowl. Coat turkey with pecan mixture., In a large skillet, heat 1 tablespoon butter over medium heat. Add turkey in batches and cook until no longer pink, 3-4 minutes on each side. Remove and keep warm. In same skillet, cook garlic in remaining butter., Combine the broth, cornstarch and lime juice until blended; gradually add to the skillet, stirring to loosen browned bits. Bring to a boil; cook and stir until thickened, 2 minutes. Stir in 1/2 teaspoon lime zest. Remove from the heat; keep warm., Meanwhile, place 1 in. of water in a saucepan; add carrots. 2 Tbsp. apple juice
1 Tbsp. apple-cider vinegar
1 cup heavy cream
1/4 tsp. dried tarragon
2 Tbsp. chopped fresh parsley

Steps:

  • Slice onions. Heat 1 tbsp. butter and 1 tbsp. oil in frying pan over medium heat. Add onions, ½ tsp. salt and ¼ tsp. pepper. Cook stirring occasionally, until golden (10-15 mins). Peel apples & slice. Add to onions and cook until soft and brown (10 mins) & remove. Heat remaining butter & oil in same pan over medium high heat. Sprinkle salt & pepper over cutlets and cook until golden, 1 minute per side. Remove & cover. Add juice & vinegar to pan and cook 1 minute scraping up browned bits from bottom of pan.
