Turkey Pumpkin Chili is the perfect Fall dish made with ground turkey, tomatoes, canned pumpkin, white beans and spinach.

1 large yellow onion (diced (about 2 cups))
1 medium bell pepper (red, yellow, or orange, diced)
6 garlic cloves (minced (or 3/4 teaspoon garlic powder))
1⅓ pounds ground turkey or chicken (90 to 93 percent lean)
One 15-ounce can white beans (drained and rinsed)
One 28-ounce can diced tomatoes with liquid
¼ cup tomato paste (no salt added)
One 14-ounce can pumpkin puree
1 cup reduced-sodium chicken or vegetable broth
2 tablespoons chili powder
1 tablespoon cocoa powder
1½ teaspoons ground cinnamon (or 1 tablespoon pumpkin pie spice)
2½ teaspoons ground cumin
1 teaspoon kosher salt
½ teaspoon ground black pepper
½ teaspoon cayenne pepper (optional)
4 cups baby spinach leaves
Avocado (optional)
Sour cream or Nonfat plain Greek yogurt (optional)
Cilantro (optional)

Steps:

  • Liberally coat a large pot or Dutch oven with oil spray and warm over medium-high heat.
  • Add the onion and bell pepper and sauté, stirring occasionally, for about 7 minutes, or until the onion softens.
  • Add the garlic, stir everything together, and cook until fragrant, about 30 seconds.
  • Add the ground turkey or chicken. Use a spatula or large spoon to break up the meat as it cooks. Continue to cook about 6 to 7 minutes, until fully cooked.
  • Add the beans, diced tomatoes, tomato paste, pumpkin puree, broth, chili powder, cocoa powder, cinnamon (or pumpkin pie spice), cumin, black pepper, and optional cayenne pepper, and stir.
  • Reduce heat and simmer for 20 to 30 minutes, stirring occasionally.
  • Right before serving, add the spinach and mix throughout.
  • Enjoy the chili with desired toppings, such as avocado, nonfat plain Greek yogurt, cilantro, and salsa.

Vegetable packed Turkey Pumpkin White Bean Chili is a creamy delicious, yet light, soup perfect for warming up with on crispy days. This healthy chili has hints of pumpkin and seasonal spices with ground-up bits of turkey and chopped onions and carrots in a creamy broth.

3 tablespoons Olive Oil
1 medium Onion (diced)
2 Carrots (peeled and chopped)
2 Garlic Cloves (minced)
1 tablespoon Ground Coriander
1 tablespoons Smoked Paprika
1 teaspoon Cumin
1/2 teaspoon Ground Black Pepper
2 lbs Ground Turkey
2 tablespoons Thyme
1 teaspoon Salt
1 15 ounce can Pumpkin Puree
2 15 ounce cans Cannelini Beans (drained)
2 cups Chicken Broth
1/2 cup Heavy Cream

Steps:

  • Place a large stock-pot or 4 or 5 quart Dutch Oven over medium-high heat and heat the olive oil. Add the onion and carrots and cook until softened, about 5 minutes.
  • Add the garlic and spices and toss to coat, cook an additional 1 minute.
  • Push the vegetables to the side and add the ground turkey using a wooden spoon to break apart. As the meat browns break it into small pieces and cook until no longer pink, about 8 to 10 minutes.
  • Mix in the thyme, salt, pumpkin puree, cannelini beans, and chicken broth and bring to a simmer. Reduce heat, and slightly cover the pot with the lid and cook for 25 minutes.
  • Remove the pot from the heat and stir in the heavy cream.

  • Heat oil in a large heavy-bottomed soup pot or Dutch oven over medium-high heat. Add onion, bell pepper, and jalapeno. Season with a pinch of salt and cook, stirring often, until the vegetables are lightly golden brown around the edges, or about 6-7 minutes.
  • Add ground turkey to the vegetables, using a spatula to break it up and mix with the vegetables. Season with a generous pinch of salt and pepper, and cook until browned and turkey is cooked through.
  • Add garlic, chili powder, cumin, smoked paprika, oregano, and cinnamon and cook for 1-2 minutes, until spices are toasted and fragrant. Stir in broth, scraping the bottom of pot to release any browned bits. Add in diced tomatoes, pumpkin puree, beans, maple syrup, and apple cider vinegar. Season with another pinch of salt and stir.
  • Place lid on pot leaving it slightly ajar. Simmer gently for 45-60 minutes. Add salt and pepper to taste before serving.
