TURKEY SAUSAGE BREAKFAST BURRITOS
These Turkey Sausage Breakfast Burritos are filling, flavorful, and so easy to make ahead and eat all week!

- Place the ground turkey in a mixing bowl and add ¼ teaspoon of the salt, ¼ teaspoon of the black pepper, the sage, the thyme, the marjoram, the crushed red pepper, and the paprika. Mash/stir together with a fork or your hands until well combined (in this step you added sausage seasonings to the ground turkey).
- Mist a large skillet with cooking spray and bring over medium heat. Cook the seasoned ground turkey, breaking it up into small chunks, until cooked through. Transfer the cooked turkey into a clean mixing bowl. Wipe out the skillet with a paper towel.
- Combine the eggs and remaining ¼ teaspoon of salt and 1/8 teaspoon of black pepper and add a splash of water (I usually quickly woosh it under tap water once or twice).Use a whisk to beat the eggs. Mist the skillet with cooking spray and bring over medium heat. Add the beaten eggs and cook, pushing them around with a spatula to scramble, for a few minutes until cooked through. Use the spatula to break the scrambled eggs up into small chunks. Transfer the eggs to the mixing bowl holding the turkey sausage. Add the shredded cheddar, salsa, and cilantro and stir to combine.
- Lay the tortillas on a clean, dry surface and divide the sausage and egg mixture amongst them (about 2/3 cup of filling on each tortilla). Fold in the edges of a tortilla and roll it up to make a wrap. Repeat with the remaining tortillas.
- Mist a griddle pan or large skillet with cooking spray and bring to medium heat. Place the rolled burritos onto the hot skillet seam-side-down and cook for 2-3 minutes until the bottoms are golden. Flip the burritos and cook for another 2 minutes until the other side is golden as well.

- Preheat the broiler. Pierce the sausages all over with a fork, arrange on a baking sheet and broil, turning halfway through, until golden brown, about 8 minutes (they will not be fully cooked). Transfer to a cutting board and cut in half on the diagonal.
- Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the bell peppers, fennel and onion and cook, stirring, until they soften slightly, 3 minutes. Add 1/2 teaspoon salt, the garlic, rosemary, red pepper flakes and fennel seeds. Cook, stirring, 1 more minute.
- Stir in 1/2 cup water, the tomatoes and basil. Reduce the heat to medium; cover and cook until the vegetables are tender, 5 minutes. Uncover; add the sausages and cook through, 3 to 4 minutes. (Add a splash of water if the sauce gets too thick.) Top with more basil.
TURKEY SAUSAGE, PEPPER AND ONION SKILLET

- Heat the oil in a large nonstick skillet over medium-high heat.
- Toss in the sausage and break up with a wooden spoon until brown.
- Pour in the beans, tomatoes, salt, pepper, and thyme, and mix until everything has warmed through.
- Move the contents of the pan out of the way to form an open well in the center of the pan. Pour the eggs into the well, and as the bottom of the eggs start to cook and solidify, use a spatula to gently scrape the cooked bits off the bottom and slowly mix with the other contents of the pan.
- Add the spinach to the pan and mix.

TURKEY SAUSAGE AND TURKEY BURRITOS

- Set oven or toaster oven to 400 degrees and heat while cooking filling.
- Slice sausage into 1/8-inch-thick rounds and cut each in half. Saute in hot, nonstick skillet along with the ground turkey, until ground turkey begins to color. Be sure to break it up as it cooks.
- Chop onion and mince garlic.
- Add oil to turkey pan, and saute onion until it begins to soften.
- Add garlic, cumin, cinnamon and cloves and saute another 30 seconds.
- Wrap two tortillas in aluminum foil and heat in oven or toaster oven about 2 or 3 minutes, until softened.
- Add the tomatoes to the filling. Reduce heat and cook while mincing jalapeno. Add jalapeno, raisins and corn and cook about 3 minutes, until corn is heated through.
- Spoon a quarter of the filling onto each of the two tortillas; roll and serve. Heat remaining two tortillas when ready for seconds.
