PIZZAIOLA SAUSAGE SANDWICH
I came across an old binder with some recipes I made years ago. I will be posting these recipes in the future. When I lived in NY, these were favorites that I made often and had forgotten all about. This is one that I used to make for football and hockey games when friends would come over. If you don't like marinated artichokes, you can leave them out. The sandwich should still be good. Artichoke hearts are one of the many things I love to experiment with, and they add so much to this great sandwich. To reduce some fat grams and calories, I used turkey sausage.

Steps:
- Preheat the oven to 350 degrees F. Spray a baking sheet with vegetable oil cooking spray. Set aside.
- In a food processor, pulse together the shallots, sun-dried tomatoes, basil, shredded mozzarella, Parmesan, tomato paste, red pepper flakes, and salt. Process until blended. Form the mixture into 36 equal-size meatballs (about 1 1/4 to 1 1/2 inches in diameter).
- Insert 1 cube smoked mozzarella cheese into the center of each meatball and form the meat around it, completely enclosing the cheese.
- In a large nonstick skillet, heat half the oil over medium heat. Add half of the meatballs and cook, turning occasionally, until well browned on all sides, about 5 minutes. Drain on paper towels. Repeat with the remaining oil and meatballs.
- Place the browned meatballs onto the prepared baking sheet. Bake for 8 to 10 minutes for medium doneness. Set aside to cool slightly, and serve with warm marinara sauce.

HOMEMADE TURKEY SAUSAGE
These low-fat homemade turkey sausage patties are simple to prepare and can be refrigerated or frozen. Be sure to buy ground turkey with some fat in it, ideally 93 percent lean, because some fat is needed to achieve that rich sausage essence. Besides, even with that much fat, the meat qualifies as lean.

Steps:
- Whisk together the fennel seed, sage, salt, pepper, thyme, garlic powder and allspice in a small bowl.
- Place the turkey in a medium bowl, then sprinkle the seasoning blend over it.
- Use your clean hands or 2 forks to gently work the seasoning into the meat, being careful not to overmix.
- It's OK if they are not absolutely evenly distributed throughout.
- Form the mixture into 8 (3 inch) patties. May be refrigerated to meld flavors or frozen for future use.
- Heat half the oil in a medium skillet over medium high heat. Once the oil shimmers, add half the patties; cook until nicely browned on the outside and cooked through, about 3 minutes per side.
- Transfer to a plate; repeat with the remaining oil and patties.

TURKEY SAUSAGE, PEPPER AND ONION SKILLET
Meet weeknight cooking at its best! Combining a few flavorful ingredients (Italian sausage, onions, garlic) with pantry staples (Muir Glen™ crushed tomatoes, Italian seasoning) and utilizing a simple cooking technique (grab that skillet), this recipe builds flavor with every step. Here's what we mean: Onions and peppers are sautéed in the drippings left behind from cooking the sausage. Aromatic garlic and Italian seasoning get added toward the end, so they have time to bloom (open up) without getting overcooked. Acidic tomatoes help release any flavor stuck to the bottom of the pan after the other ingredients have been cooked, to the benefit of the entire dish (and the dishwasher!). So the end result is a single-dish dinner alive with richly spiced sausage, silky cooked vegetables and swimming in a tomatoey pan sauce.

Steps:
- Make the sauce. If using fresh tomatoes, roughly chop them. Place in a pan with the garlic, oil, oregano or marjoram and season to taste. Bring to the boil, then simmer for 10 mins, stirring once or twice. Take off the heat, stir in the basil, then set aside.
- When ready to serve, heat a heavy-based frying pan until you can feel a strong heat rising. Smear the oil on both sides of the steak and season each side. Slap the steak into the centre of the pan and adjust the heat to medium-high. Cook for 6 mins, turning halfway through - this is for medium rare. For a medium steak, allow 7-8 mins in total, allow 8-10 mins for well done.
- Remove from the pan to a warm platter and leave to stand for 5 mins. Cut in two and serve drizzled with any juices and topped with the sauce.
