SPICY BEANS WITH TURKEY SAUSAGE

Spicy Beans with Turkey Sausage image

Here's a jambalaya-type dish that comes together in the slow cooker. It's a wonderful way to warm up cold winter nights and works equally well for casual get-togethers or family dinners. For extra pizzazz, top with sour cream or shredded cheese, or try it with a loaf of crusty bread. -Dorothy Jordan, College Station, Texas

TURKEY SAUSAGE AND PEPPER SKILLET

Turkey Sausage and Pepper Skillet image

This easy and flavorful skillet recipe is one you'll want to put in your regular rotation. It's healthier than using pork sausage and makes for a quick weeknight dinner, and works well for meal-prepping. I like to serve mine over steamed rice.

Provided by France C

Categories     Meat and Poultry Recipes     Turkey     Sausage

Time 30m

Yield 4

Number Of Ingredients 8

2 tablespoons olive oil, divided
4 sweet Italian turkey sausage links (such as Jennie-O®)
1 large red onion, chopped
1 red bell pepper, cut into 1 1/2-inch chunks
1 green bell pepper, cut into 1 1/2-inch chunks
3 cloves garlic, minced
½ teaspoon crushed red pepper, or more to taste
salt and ground black pepper to taste

Steps:

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook turkey sausages until they begin to brown and firm up, 3 to 4 minutes per side. Remove to a cutting board and let cool slightly before cutting into 1/2-inch-thick diagonal slices; they will not be completely cooked at this point.
  • Heat remaining 1 tablespoon oil in the same skillet over high heat. Quickly stir-fry onion until it begins to brown, about 1 minute. Add peppers and continue cooking over high heat, stirring constantly, until peppers begin to brown, 2 to 3 minutes. Do not overcrowd the skillet in order to get a nice char on the vegetables. Mix in garlic and cook for 1 minute.
  • Return sausage, and any accumulated juices, to the skillet. Season with crushed red pepper, salt and pepper and reduce heat to medium. Stir to combine and continue cooking until sausage is no longer pink in the center, about 2 minutes more.

TURKEY SAUSAGE & PESTO SOUP

Turkey sausage & pesto soup image

Cook up some turkey or chicken sausages and combine with cannellini beans, kale and pesto to make this filling soup. Serve with crusty bread, if you like

Provided by Nadine Brown

Categories     Dinner

Time 40m

Number Of Ingredients 10

6 turkey or chicken sausages
1 tbsp olive oil, plus extra for drizzling (optional)
1 onion, finely sliced
2 large garlic cloves, thinly sliced
800ml vegetable stock
400g can cannellini beans, drained and rinsed
100g kale leaves, woody stems removed
½ lemon, juiced
60g green pesto
crusty bread, to serve (optional)

Steps:

  • Squeeze the meat out of the sausage skins and break into small pieces. Discard the skins. Heat the oil in a wide saucepan over a medium-low heat. Once hot, add the sausagemeat and cook, squashing with a spatula, until browned and slightly crispy, about 6-7 mins. Remove from the pan, transfer to a bowl and cover.
  • Add the onion to the pan, with an extra splash of oil if the pan is looking dry, and cook for 4-5 mins until softened. Tip in the garlic and cook for 1 min. Pour in the stock, scraping to loosen any stuck-on bits at the bottom. Add the sausage back in along with the beans and bring to a gentle simmer. Cook for another 10 mins, stir in the kale in two batches and cook for a further 2-3 mins until slightly wilted. Stir in the lemon juice and season lightly with salt and a good amount of black pepper.
  • Remove the soup from the heat, divide between bowls and top with a spoonful of the pesto. Drizzle over some oil and serve with crusty bread, if you like.
