1 medium (1 cup) onion, thinly sliced
1 cup Cranberry Orange Relish **
2 medium (1 cup) oranges, peeled, sliced 1/4-inch, if desired

Steps:

  • Melt butter in 10-inch skillet until sizzling; stir in garlic, salt, pepper and thyme. Add turkey tenderloins and onion. Cook over medium-high heat, turning occasionally, 10-12 minutes or until turkey is browned.
  • Reduce heat to low. Cover; cook 25-30 minutes or until turkey is fork tender. Stir relish into pan juices. Slice turkey; serve with relish mixture and orange slices, if desired.

1 cup thinly sliced onion
2 teaspoons canola oil
2 cups dried cranberries
2 cups orange juice
1-1/2 teaspoons balsamic vinegar
6 turkey cutlets (1/2-inch thick and 4 ounces each )
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a large skillet, saute onion in oil for about 6 minutes or until lightly browned. Stir in the cranberries, orange juice and vinegar. Bring to a boil over medium heat; cook and stir until sauce begins to thicken. Set aside., Sprinkle turkey cutlets with salt and pepper. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Prepare grill for indirect heat using a drip pan. , Place turkey over drip pan and grill, covered, over indirect medium heat for 5-6 minutes on each side or until a thermometer reads 170°. Top each cutlet with some of the cranberry sauce; grill 1-2 minutes longer. Serve with remaining cranberry sauce.

Cranberries make a dark, rich red ketchup with a tangy fruit flavor. It is sensational on turkey sandwiches and makes a great glaze for baked ham slices

2 cups chopped onions
4 cups water
4 slices orange zest, 1 x 3 inch
8 cups cranberries, fresh or frozen
1 cup white wine vinegar or 1 cup rice wine vinegar
1 cup brown sugar, firmly packed
1 cup honey
1 1/2 teaspoons plain salt (non-iodized)
1 cinnamon stick, broken up (3inches)
1 teaspoon allspice berry
1 teaspoon whole cloves
3 slices fresh gingerroot, about the size of a quarter

Steps:

  • In large heavy non-reactive pan, combine the onion, water, and zest.
  • Cover and bring to a boil over medium-high heat; reduce the heat to low, and simmer until the onion is softened (about 10 minutes).
  • Add the cranberries, bring the mixture to a boil, stirring frequently, and simmer until the berries are very soft (about 15 minutes). In a blender, puree half the mixture at a time; rinse out the pan and then return the puree to it.
  • Add the vinegar, sugar, honey and salt. Place the cinnamon, allspice, cloves, and ginger in a small muslin spice bag, tie it up tightly and add to the cranberry mixture. Over medium heat, bring to a boil, stirring frequently; reduce heat to low and cook until very thick (about 30 minutes).
  • Remove the spice bag and ladle the ketchup into 6 sterilized half pint jars, leaving one quarter inch space from the top. Run a rubber spatula around the insides of each jar to release the air bubbles. Wipe each rim clean. Place lid on each jar, tighten screw bands and process in a boiling water bath for 15 minutes.

CROCK POT CRANBERRY TURKEY TENDERLOIN

The store had a deal on those pre-packaged flavored turkey tenderloins, so I picked up a package to experiment with. This was put together with ingredients I had on hand. The tenderloins I got were the Jennie-O Roast Turkey flavor ones, but I think it would work well with plain tenderloins or a turkey breast as well. Also probably good with pork roasts and chicken parts. I didn't salt the turkey because it was pre-flavored, but plain turkey could probably use some salt. I'm guessing on the amount of cranberry sauce, as I used about 3/4 of a can of whole berry sauce. It's a yummy fall dish, though, and would be nice for Thanksgiving, too!

Pat into an ungreased 9x5-in. loaf pan., Bake, uncovered, 25 minutes; drain if necessary. Combine cranberry sauce, ketchup, pepper sauce and remaining herbs; spread over meat loaf. Bake 20-25 minutes or until no pink remains and a thermometer reads 165°. , Freeze option: Shape meat loaf in plastic wrap-lined loaf pan; cover and freeze until firm. 2 turkey breast tenderloins (1 to 1-1/2 pounds)
1/2 teaspoon poultry seasoning
1 tablespoon vegetable oil
1 tablespoon butter

3 tablespoons apple jelly
3/4 teaspoon Dijon mustard
1/4 teaspoon ground allspice

Steps:

  • Cut tenderloins widthwise in half. Slice each half lengthwise in half, but do not cut all the way through. Open and flatten each piece. Sprinkle both sides with poultry seasoning. 1 loaf French bread
4 tablespoons margarine
8 ounces sliced deli turkey meat
8 slices provolone cheese
8 slices precooked bacon

4 lettuce leaves

Steps:

  • Preheat the oven broiler.
  • Cut the bread into four pieces, and split lengthwise almost all the way through for four sandwiches. Spread margarine on the inside of each piece. Place on a baking sheet, cut side up.
  • Toast bread under preheated broiler until lightly browned, 1 to 2 minutes. Remove pan from the oven.
  • Layer 4 pieces of bread with 2 slices each of the turkey, cheese, and bacon. Remove the remaining 4 slices of bread from the baking sheet and reserve for sandwich tops. Cool bread slightly, and spread mayonnaise onto the cut side of each of the 4 top slices.

1 bottle dry white wine
1 fresh whole turkey (14 to 16 pounds), rinsed and patted dry

5 red onions (about 2 pounds), peeled and quartered

Steps:

  • Preheat oven to 450 degrees with rack on lowest level. In a large saucepan, melt 1 1/2 cups butter; add white wine. Turn off heat, leaving mixture on top of stove to keep warm. Fold a large piece of cheesecloth into quarters; cut it into a 17-inch, four-layer square. Immerse cheesecloth in wine mixture, and set aside to soak.
  • Place turkey, breast side up, on a clean work surface. Fold wing tips under turkey. Season cavity with salt and pepper.
  • Fill large cavity loosely with 7 to 8 cups stuffing. Tie legs together loosely with kitchen twine. Stuff the turkey neck cavity, fold neck flap under, and secure with a bamboo skewer. Rub turkey with the remaining 4 tablespoons butter, and season with salt and pepper.
  • Remove cheesecloth from liquid; squeeze lightly, leaving it very damp. Spread it evenly over breast and leg area.
  • Arrange onions in a large, heavy roasting pan. Place turkey on top of onions; transfer to oven, and roast 30 minutes. Reduce oven temperature to 350 degrees. Pour a quarter of the wine mixture over cheesecloth and exposed parts of turkey; continue roasting 2 hours more, basting every 30 minutes.
  • When all the wine mixture has been used, remove the cheesecloth and discard; continue cooking until an instant-read thermometer inserted into the thickest part of the thigh (avoiding bone) registers 155 degrees. about 40 minutes more.
  • Brush the turkey with the cranberry glaze, coating completely. Roast turkey 10 to 15 minutes more. Brush turkey again to coat, and continue cooking 10 minutes more to set the glaze (the turkey should register 165 degrees).
  • Transfer turkey to a carving board; let rest about 30 minutes before carving. Reserve pan juices for preparing gravy.
