Tuscan Turkey Torta image

This marvelous turkey torta has a very familiar taste that will remind you of both delicious deep-dish pizza and quiche.

1 1/3 cups Original Bisquick™ mix
1/3 cup Italian dressing
1 can (15 oz) Progresso™ cannellini (white kidney) beans, drained, rinsed and mashed
1 1/2 cups diced cooked turkey
1 package (10 ounces) frozen chopped spinach, thawed and squeezed to drain
1 cup shredded mozzarella cheese (4 ounces)
3 eggs, slightly beaten
1 1/4 cups milk
1/3 cup slivered almonds

Steps:

  • Heat oven to 375°F. Mix Bisquick mix, dressing and beans. Spread in bottom and 2 inches up side of springform pan, 9x3 inches. Bake 10 to 12 minutes or until set.
  • Layer with turkey, spinach and cheese. Mix eggs and milk; pour over cheese. Sprinkle evenly with almonds.
  • Bake 50 to 55 minutes or until golden brown and knife inserted near center comes out clean. Let stand 10 minutes. Loosen edge of torta from side of pan; remove side of pan.

Kosher salt
Mexican oregano, for sprinkling
1 torta roll, cut in half
Butter-Olive Oil Spread, recipe follows
Baja Sauce, recipe follows
Sliced queso fresco, for topping
Sliced fried jalapeño, for topping
Avocado slices, for topping
Pico de Gallo, recipe follows
Mixed salad greens, for topping
Cabbage and Lime Salad, recipe follows
1/2 cup (1 stick) softened butter
1/4 cup extra-virgin olive oil
1 cup good mayonnaise
1 to 2 tablespoons fresh key lime juice
Pinch kosher salt
2 medium onions, fine diced
4 tomatoes, fine diced
2 bunches cilantro, coarsely chopped
1/2 cup fresh squeezed key lime juice
1 tablespoon kosher salt
1/2 cup finely sliced cabbage
2 tablespoons shredded carrots
1 tablespoon chopped fresh cilantro
1 teaspoon diced jalapeños
1 key lime
Pinch kosher salt

Steps:

  • For the carnitas: Preheat the oven to 225 degrees F.
  • Place pork butt in a 4-inch-deep roasting pan and coat both sides generously with salt and oregano. Roast fat-side-up 8 hours or up to overnight.
  • Chop meat and crispy fat or pull meat with tongs while hot. Pour juices (if you have any!) over pork and reserve for tortas, tacos, burritos or whatever you can imagine.
  • For the torta: Lightly spread all four surfaces of torta roll with butter-olive oil spread. Toast all sides on the griddle or in a pan.
  • Spread Baja sauce on both halves of the torta. Top with carnitas, queso fresco, jalapeños, avocado, pico de gallo and mixed greens. Cut in half and serve with cabbage and lime salad.
  • Combine butter and olive oil until blended.
  • Combine mayonnaise, lime juice and salt.
  • Mix the onions, tomatoes, cilantro, lime juice and salt well in a bowl and chill.
  • Mix cabbage, carrots, cilantro and jalapeños in a bowl. Squeeze key lime over salad and add salt, then toss.

1 red onion, halved and thinly sliced
¼ cup Mexican crema
2 limes
¼ teaspoon salt
2 tablespoons vegetable oil, divided
1 chayote - peeled, halved, seeded, and diced into 1/2-inch pieces
1 poblano pepper - seeds and white ribs removed, diced into 1/2-inch pieces
6 (6 inch) flour tortillas
cooking spray
6 sprigs cilantro, minced, divided
½ teaspoon onion powder
¼ teaspoon salt
1 ¼ pounds ground turkey
¼ cup water
3 tablespoons taco seasoning mix
1 teaspoon chili powder
1 cup guacamole
½ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place red onion slices and crema in separate small bowls. Zest limes into another small bowl. Halve limes and squeeze juice into a fourth small bowl.
  • Stir 1 teaspoon lime juice into the bowl of crema. Add the remaining lime juice to the bowl with the red onions; stir in 1/4 teaspoon salt and let marinate at room temperature until pickled, at least 20 minutes.
  • Heat oil in a skillet over medium heat. Add chayote and poblano pepper; cook, stirring constantly, until golden and tender, about 10 minutes.
  • Coat tortillas on both sides with cooking spray. Place tortillas on a large baking sheet.
  • Bake in the preheated oven until crisped and lightly brown, 8 to 10 minutes.
  • Stir the lime zest, 1/2 the cilantro, onion powder, and 1/4 teaspoon salt into the chayote-poblano mixture. Pour mixture into a bowl.
  • Heat remaining 1 tablespoon oil in the same skillet over medium heat. Add ground turkey; cook, stirring occasionally, until browned, about 7 minutes. Stir in 1/4 cup water, taco seasoning, and chili powder. Cook until water has evaporated, about 4 minutes.
  • Spread guacamole over each crisped tortilla; top with chayote-poblano mixture, ground turkey, pickled onions, lime crema, and remaining cilantro.

  • Soak onion in vinegar 1 hour, then drain. Mix lime juice into some sour cream. Build a sandwich with Kaiser roll, lime sour cream, turkey, avocado, lettuce, hot sauce, cilantro, cheese, and pickled onion.

4 (2.6 ounce) bolillo rolls or baguettes
4 tablespoons Wholly Guacamole dip
12 (1 ounce) slices ultra thin, lower sodium, oven-roasted turkey slices
1 cup shredded lettuce

Steps:

  • In a medium bowl, combine beans, corn, cilantro, onion, vinegar, honey, hot pepper sauce, and cumin; mix to combine. Gently mix in cheese. Set aside.
