SPICED TURNIPS (SHALGAM MASALA)
I love turnips. This Northern Indian dish is great way to spice up traditional mashed turnips. This dish is great garnished with fresh cilantro or parsley and served with basmati rice, or with naan bread. The amount of chiles you use really controls the heat factor in this dish.

Steps:
- Heat oil in a large saucepan over medium heat. Add onion; cook and stir until soft, about 10 minutes. Stir in ginger-garlic paste and chile peppers; cook until fragrant, about 1 minute.
- Stir tomatoes, coriander, cumin, turmeric, and salt into the saucepan; mix well. Add turnips and hot water; stir well. Cover and bring to a boil. Reduce heat and simmer until turnips are tender, 20 to 30 minutes. Add brown sugar and coarsely mash the turnips.

COUNTRY TURNIP GREENS

Steps:
- Put the ham in a large stockpot over medium heat. Cook until the ham is crispy and the fat is rendered, about 8 minutes. Pour in the apple cider vinegar and scrape the bottom of the pot with a wooden spoon to lift up any brown bits.
- Meanwhile, rip the greens into large pieces to make it easier to fit all of them into the stockpot.
- Add the greens to the pot and season generously with black pepper. Pour in the chicken stock and stir to combine. Bring the greens to a simmer and cover the pot. Reduce the heat to medium low and cook until the greens are tender and the liquid is reduced by half, about 45 minutes. Remove the lid and continue to cook, stirring occasionally, until the liquid is nearly gone, about 10 minutes more. Serve immediately.
TURNIP GREENS KOOTU RECIPE - INDIAN STYLE
Turnip greens are just sauteed with onions, garlic and tempered with with mustard, red chilly and curry leaves. Goes well with hot steamed white rice.

Steps:
- Soak the moong dal in water for 30 mins. Drain the water, wash the dal and keep it aside.
- Wash and roughly chop the greens and dice the stalks.
- Heat the cooker, add dal, water, turmeric powder and salt. Cook it for 3 whistles.
- Heat a pan with oil, temper it with mustard seeds, urad dal, red chilly, curry leaves, asafoetida.
- Add onion and garlic, fry until golden brown.
- In a low flame, add coconut, fry it for a min.
- Add cumin powder, pepper powder, fry for few secs.
- Add greens, saute this till it reduces in size.
- Add cooked dal, mix well, add water if needed, cook it for few mins and finally add ghee, mix it and remove it from heat.
- Serve with hot steamed rice.
HEALTHY AND DELICIOUS SOUTHERN TURNIP GREENS
Traditional seasonings for southern greens are bacon grease or ham. This healthier version is a delicious alternative. Serve as-is or with sauteed bell peppers, onions, and garlic.

Steps:
- Heat the oil in a large non-stick pan or wok, sizzle the cumin and mustard seeds for 1 min, then add the chilli, ginger and turmeric. Fry until aromatic, then add the greens, a pinch of salt, a splash of water and the peas.
- Cover the pan and cook for 4-5 mins until the greens have wilted. Add the lemon juice, ground coriander, half the fresh coriander and half the desiccated coconut, then toss everything together. Pile into a serving dish and scatter with the rest of the coconut and coriander.
