8 ounces country ham, cubed (see Cook's Note)
1/3 cup apple cider vinegar
1 pound stemmed turnip greens (see Cook's Note)
Freshly cracked black pepper
4 cups low-sodium chicken stock (one 32-ounce carton)

Steps:

  • Put the ham in a large stockpot over medium heat. Cook until the ham is crispy and the fat is rendered, about 8 minutes. Pour in the apple cider vinegar and scrape the bottom of the pot with a wooden spoon to lift up any brown bits.
  • Meanwhile, rip the greens into large pieces to make it easier to fit all of them into the stockpot.
  • Add the greens to the pot and season generously with black pepper. Pour in the chicken stock and stir to combine. Bring the greens to a simmer and cover the pot. Reduce the heat to medium low and cook until the greens are tender and the liquid is reduced by half, about 45 minutes. Remove the lid and continue to cook, stirring occasionally, until the liquid is nearly gone, about 10 minutes more. Serve immediately.

5 tablespoons margarine
1 turnip bulb, chopped
1 medium yellow onion, chopped
1 (8 to 12-ounce) ham hock, chopped
Pinch salt
1 tablespoon sugar
2 pounds turnip greens, washed, stemmed and chopped
1 teaspoon red pepper flakes
Pinch freshly ground black pepper
1 tablespoon horseradish
Pinch wasabi powder
1 tablespoon ham base
2 cups water

Steps:

  • In a large, heavy pot over medium heat, add the margarine, onion and ham hock. Saute until onions seem translucent, about 5 to 6 minutes. Add the remaining ingredients, except the turnip greens, and mix together. Add the turnip greens and cook on medium heat, partially covered until tender, stirring occasionally, about 1 1/2 to 2 hours. When the greens and turnips are tender it's time to eat.

A southern classic, this is my husband's favorite greens. It may not be the exact way that all southern cooks prepare their greens (because nobody taught me how to cook them,) but it is my own recipe and is delicious, especially alongside black-eyed peas and cornbread. It's great for the traditional New Year's meal to bring good fortune!

1 quart(s) bag blanched, drained & frozen turnip greens (or 3 or 4 ten oz. boxes of your favorite greens)
1/4 cup(s) chopped/diced sweet onion
1 - country ham hock or 1/3 cup diced country ham
- water to fill pot
- fresh ground black pepper to your taste
- sea salt to your taste
4 - hard boiled eggs, peeled & chopped
1/2 teaspoon(s) apple cider vinegar per serving

Steps:

  • Place frozen greens, chopped onion & ham hock (or diced ham) in a dutch oven or stock pot.
  • Fill pot with enough water to generously cover, but not so much as to boil over.
  • Add freshly ground black pepper to taste.
  • Bring to boil, over medium-high heat, stirring occasionally to separate the frozen greens. When greens are all separated, reduce heat to medium-low, cover with lid & let simmer for 2 hours or more, checking liquid level occasionally. You may remove lid during last half hour of cooking, if desired, to reduce liquid (you may need to increase heat to medium.)
  • Taste for seasoning; add salt and pepper as needed.
  • Serve hot with chopped egg and cider vinegar for each serving.
  • Cover & refrigerate leftovers.

2-3/4 pounds turnips, peeled and cut into 1/2-inch cubes
1 bunch fresh turnip greens (about 12 ounces), chopped
8 ounces cubed fully cooked country ham or 2 smoked ham hocks (about 1-1/2 pounds)
1 medium onion, chopped
3 tablespoons sugar
1-1/2 teaspoons coarsely ground pepper
1-1/4 teaspoons salt
2 cartons (32 ounces each) chicken broth

Steps:

  • In a greased 6- or 7-qt. slow cooker, combine all ingredients. Cook, covered, on low 5-6 hours or until vegetables are tender, stirring once. If using ham hocks, remove meat from bones when cool enough to handle; cut ham into small pieces and return to slow cooker. Serve with a slotted spoon.
