1 (19.25 oz.) package Pillsbury® Family Size Chocolate Fudge Brownie Mix
1/2 cup water
1/4 cup Crisco® Pure Vegetable Oil
1 large egg
2 cups pecan halves, split lengthwise
FROSTING:
22 vanilla caramels, unwrapped
1 to 2 tbsps. water
2 tsps. powdered sugar
COOKIES:
Crisco® Original No-Stick Cooking Spray
1/2 cup Pillsbury BEST® All Purpose Flour

Steps:

  • HEAT oven to 350 degrees F. Spray cookie sheets with no-stick cooking spray. Combine flour, brownie mix, water, oil and egg in large bowl; blend well. Drop dough by teaspoonfuls 2 inches apart onto prepared cookie sheets. Arrange 5 pecan pieces under each to resemble head and legs of turtle.
  • BAKE 8 to 12 minutes or until top of cookies appear almost set. Cool 1 minute; remove from cookie sheets. Cool 2 minutes or until completely cooled.
  • COMBINE caramels and 1 tablespoon water in small saucepan; cook and stir over low heat until melted and smooth, adding enough additional water for desired drizzling consistency. Stir in powdered sugar until smooth. Spoon over cookies. Let stand until frosting is set. Store cookies between sheets of waxed paper in tightly covered container.
  • High Altitude (above 3500 ft.):
  • INCREASE flour to 3/4 cup. Bake at 375 degrees F for 9 to 13 minutes.

1 1/4 cups flour
3/4 cup dark cocoa

14 ounces caramels, unrapped
1/2 cup evaporated milk

Steps:

  • Preheat oven to 350.
  • Grease 9x13 inch baking pan.
  • Melt butter.
  • Stir in sugar, vanilla and eggs.
  • Stir in flour, cocoa and salt.
  • Stir in 1 1/2 cup chocolate chips and 1 cup pecans.

1 (14 ounce) package individually wrapped caramels
1 (12 fluid ounce) can evaporated milk
1 (18.25 ounce) package chocolate cake mix
6 tablespoons butter, melted
1 cup semisweet chocolate chips
¼ pound whole pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan. Set aside.
  • Unwrap caramels and place in saucepan with 2 Tablespoons evaporated milk. Melt over medium to low heat, stirring constantly.

1/4 cup light corn syrup
1/3 cup heavy cream, room temperature
1 stick unsalted butter, room temperature, plus more for dish
1 cup plus 2 tablespoons unbleached all-purpose flour
1/2 teaspoon baking powder
Kosher salt
8 ounces bittersweet chocolate, finely chopped (1 1/2 cups), plus 2 ounces melted
3 tablespoons vegetable oil
1 cup granulated sugar
1 cup packed light-brown sugar
4 large eggs, room temperature
1 1/2 teaspoons pure vanilla extract
2 cups pecan halves (8 ounces)
Flaky sea salt, such as Jacobsen, for sprinkling

Steps:

  • Caramel: Combine sugar and corn syrup in a saucepan. Cover and cook over medium-high heat until sugar has dissolved and mixture boils, about 5 minutes. Uncover and continue to cook, swirling pan occasionally and brushing down sides with a wet pastry brush, until mixture turns medium amber, 3 to 4 minutes more. Carefully add cream in a slow stream (mixture will bubble vigorously). Remove from heat and stir until smooth. Let cool until caramel thickens slightly but is still pourable, about 10 minutes. Makes 1 cup. Use immediately.
  • Brownies: Preheat oven to 350 degrees. Butter a 9-by-13-inch baking dish. Line bottom and long sides with parchment, leaving an overhang; butter parchment.
  • Whisk together flour, baking powder, and 3/4 teaspoon kosher salt. In a large heatproof bowl set over (not in) a pot of simmering water, melt chopped chocolate and butter with oil. Remove from heat. Add both sugars; whisk until smooth. Add eggs and vanilla; whisk until glossy, 1 minute. Add flour mixture; stir just until combined (do not overmix). Pour batter into prepared dish; smooth top with a spatula. Arrange pecans on top in a single layer.
  • Bake until a tester inserted into center comes out with moist crumbs, 40 to 45 minutes. Transfer dish to a wire rack; let cool completely.

Steps:

  • Spray a 9 x 13 inch pan with non stick cooking spray. Heat oven to 350 degrees.

  • Stir in eggs, flour, sugar, baking soda and vanilla. Stir together well.

1/4 cup (1/2 stick) unsalted butter, plus more for pan
3 ounces good-quality unsweetened chocolate, coarsely chopped
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon coarse salt
1 cup sugar
2 large eggs
1/4 cup whole milk
1 teaspoon pure vanilla extract
1 cup sugar
1/3 cup heavy cream
1 teaspoon pure vanilla extract
1/2 teaspoon coarse salt
1 cup coarsely chopped toasted pecans (about 4 ounces)

Steps:

  • Preheat oven to 325 degrees. Line a buttered 8-inch square baking dish with foil or parchment paper, allowing a 2-inch overhang. Butter lining (excluding overhang); set aside.
  • Make batter: Put chocolate and butter in a medium heatproof bowl set over a pan of simmering water; stir until melted. Let cool slightly.
  • Whisk together flour, baking powder, and salt in another medium bowl; set aside.
  • Put sugar and eggs in the bowl of an electric mixer fitted with the whisk attachment, and beat on medium speed until pale and fluffy, about 4 minutes.   • Make topping: Bring 1/3 cup water and the sugar to a boil in a medium saucepan over medium-high heat, stirring, until sugar has dissolved. When mixture comes to a boil, stop stirring, and wash down sides of pan with a wet pastry brush to prevent crystals from forming. Continue to cook, swirling pan occasionally, until medium amber, 5 to 7 minutes.
  • Remove from heat, and immediately add cream, vanilla, and salt. Gently stir with a wooden spoon or heatproof spatula until smooth. Add pecans; stir until caramel begins to cool and thickens slightly, about 1 minute.
  • Pour caramel over cool brownies; spread with an offset spatula. Refrigerate until cold, 30 minutes to 1 hour.
  • Let brownies stand at room temperature at least 15 minutes before serving. Lift out, and cut into 16 squares, wiping knife with a hot, damp cloth between each cut. Brownies can be refrigerated in an airtight container up to 2 days.
