Easy Cinnamon Rolls (with Two Ingredient Dough!) image

The best homemade cinnamon rolls made with two ingredient Greek yogurt dough! No kneading, no waiting for the dough to raise! Delicious homemade cinnamon rolls without the hard work.

1.25 cups self rising flour
1 cup nonfat plain Greek yogurt
2 tbsp unsalted butter, melted
1 tbsp cinnamon
2 tbsp brown sugar
2 oz low fat cream cheese (glaze)
1 tbsp nonfat plain yogurt (glaze)
1 tsp vanilla (glaze)
3 tbsp swerve confectioners sugar (or regular, for glaze)

Steps:

  • Preheat the oven to 400 degrees. Make the two ingredient dough: In a large mixing bowl, combine the flour and yogurt, stirring until they are well combined, using a fork, if necessary. If the mixture is too sticky, add a Tablespoon of additional flour and continue to mix. Repeat as necessary until the mixture becomes a workable ball of dough. Remove the dough from the bowl and knead on a lightly floured surface, until the dough is smooth.
  • In a small bowl, combine the cinnamon, brown sugar, and half of the butter. Set aside.
  • Roll the dough into a rectangle shape, then brush the filling mixture on top of the rolled dough, covering the entire area.
  • Roll the dough lengthwise. Then slice the rolled dough into even pieces.
  • Lay each piece flat back onto a parchment paper lined baking sheet, and lightly brush with the remaining melted butter. Bake for 15-18 minutes. While rolls are in the oven, prepare the glaze.
  • To prepare the glaze, combine ingredients in a medium bowl. Stir together until well combined.
  • Allow the rolls to cool for 3-5 minutes before glazing.

¼ cup butter, divided
2 cups all-purpose flour
2 tablespoons white sugar
2 teaspoons baking powder
1 teaspoon salt
3 tablespoons butter, softened
¾ cup milk
1 egg
½ cup white sugar
½ cup brown sugar
1 tablespoon ground cinnamon
1 cup confectioners' sugar
4 ounces cream cheese, softened
¼ cup butter, softened
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Brush a 9-inch square baking dish with 2 tablespoons melted butter.
  • Whisk flour, 2 tablespoons white sugar, baking powder, and salt together in a large bowl. Work 3 tablespoons softened butter into flour mixture using your hands. Beat milk and egg together in another bowl; pour into flour-butter mixture and stir with a rubber spatula until a soft dough forms.
  • Turn dough out onto a floured work surface and roll dough into a 1/4-inch thick rectangle. Brush surface of dough with 2 tablespoons melted butter.
  • Whisk 1/2 cup white sugar, brown sugar, and cinnamon together in a small bowl. Sprinkle 1/2 of the cinnamon sugar mixture in the bottom of the prepared baking dish. Sprinkle remaining cinnamon sugar over butter-brushed dough. Roll dough around filling to form a log; cut log into 18 rolls and place rolls in the prepared baking dish.
  • Bake in the preheated oven until rolls are set, 20 to 25 minutes.
  • Beat confectioners' sugar, cream cheese, 1/4 cup softened butter, and vanilla extract together in a bowl until frosting is smooth. Top hot cinnamon rolls with cream cheese frosting.

This recipe for 6 cinnamon rolls is just right for breakfast or a coffee break! Using only two ingredients for the dough, you can roll up these and have them ready in less than an hour. They are tasty with or without the vanilla glaze.

1 ½ cups self-rising flour, plus more for kneading
1 cup whole-milk plain Greek yogurt
2 tablespoons unsalted butter, melted, divided
1 teaspoon ground cinnamon
1 pinch salt
2 tablespoons light brown sugar
¼ cup chopped pecans
½ cup sifted confectioners' sugar
1 tablespoon milk
¼ teaspoon vanilla extract
1 pinch salt

Steps:

  • Combine self-rising flour and yogurt in a medium mixing bowl, stirring, until it begins to form a ball.
  • Place dough ball on a lightly floured silicone mat or pastry board and knead a few times, until the dough is smooth. Add more flour if the dough sticks to the work surface.
  • Lightly flour a rolling pin and roll dough out to a rectangle about 7 inches wide and 12 inches long, adding flour to the rolling pin if it sticks to the dough.
  • Brush rolled dough with 1 tablespoon melted butter.
  • Combine cinnamon and salt in a small bowl. Sprinkle over the buttered dough. Evenly distribute brown sugar over the dough rectangle, and follow with the chopped pecans.
  • Begin rolling the dough at one end, continuing until all the cinnamon and nuts are rolled inside the dough, until you form a log about 4 inches across and 7 inches long.
  • Wrap the dough roll in parchment paper and place in the freezer for about 20 minutes.
  • Meanwhile, preheat the oven to 375 degrees F (190 degrees C). Line a pie pan with parchment paper, or grease the bottom of the pan.
  • Cut the dough into 6 rolls using a bench scraper or sharp knife.
  • Place in the prepared pan, in a ring, with the rolls touching each other. Brush the tops of the rolls with the remaining melted butter.
  • Bake in preheated oven until the tops are lightly browned, 20 to 25 minutes. Remove from the oven and allow to cool slightly.
  • While the rolls are in the oven, stir confectioners' sugar, milk, vanilla extract, and salt together in a bowl until all the sugar is dissolved. Add a bit more milk if the glaze is too thick. Add a bit more sugar if the glaze is too thin.
  • Drizzle optional glaze over the rolls, if desired, and serve warm.

  • Mix your dough till you can form a ball, it will be slightly sticky, sprinkle some flour on a flat surface and keep kneading the dough in some extra flour till it's not sticky. Roll the dough out *mine was rolled out to approx 12" by 10"
  • In a small bowl mix the brown sugar and cinnamon together and sprinkle over the dough. Roll your dough up and cut into 2 equal pieces, then cut each piece into 6 giving you 12 rolls.
