Creamy, flavorful, and 100% addictive, this is the ultimate queso recipe! Perfect by itself, or load it up with toppings too make it even more amazing!

Number Of Ingredients 9

1 pint half and half (don't use fat free)
1 pound high-quality white American cheese, chopped (look for this at the deli counter of your grocery store, not the prepackaged slices)
8 ounces pepper jack cheese, shredded and divided (a block, not shreds; the shreds are coated in a powder that can impact the texture of the queso)
1/4 teaspoon kosher salt
1/4 teaspoon onion powder
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 cup (1 4.5-ounce can) roasted green chilies
See notes for optional toppings

Steps:

  • In a medium saucepan, combine the half and half and the salt, onion powder, chili powder, and garlic powder. Cook over medium heat, stirring very frequently (constantly near the end), until bubbles form around the edges and it almost boils. Reduce heat to medium-low.
  • Whisking constantly, add a handful of the chopped American cheese. Stir until the cheese is completely melted, then repeat until all the American cheese has been used. Repeat with the pepper jack cheese, reserving 1/4 cup. of the cheese for later. When the mixture is completely smooth, remove from heat. Add the chilies and stir until thoroughly incorporated. Transfer to a serving dish, add toppings as desired, and sprinkle with reserved pepper jack cheese.

1 lb hot sausage
1 (10-oz) can diced tomatoes and green chiles, undrained
1 (15-oz) can chili beans, undrained
1 (8-oz) package Velveeta cheese
1 (8-oz) package cream cheese
1 Tbsp chili powder
1 Tbsp cumin
½ cup milk, (optional)

Steps:

  • In a large skillet, cook sausage until crumbled and no longer pink. Drain fat.
  • Stovetop Preparation: In a large saucepan or Dutch oven, combine cooked sausage and remaining ingredients. Cook on medium until cheese has melted. Add milk if cheese dip is too thick.
  • Microwave Preparation: In a large microwave-safe bowl, combine cooked sausage and remaining ingredients. Microwave on HIGH for 4 minutes, stir. Microwave on HIGH for an additional 4 minutes, stir. Continue microwaving in 1 to 2-minute intervals until cheese is melted and dip is thoroughly heated. Serve immediately. Add milk if cheese dip is too thick.
  • Slow Cooker Preparation: Combine cooked sausage and remaining ingredients in the slow cooker. Cover and cook on LOW 1 to 2 hours, until cheese is melted. Add milk if cheese dip is too thick.

1 pound ground beef
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon red Pepper flakes
1 cup chicken broth (you can also use Coke which gives a sweeter taste)
16 ounces Velveeta cheese (cut into cubes)
1/2 cup pepper jack cheese (shredded)
2 10 ounce cans Rotel tomatoes & green chilies, with juice
1 cup black beans (drained and rinsed)
1/4 cup red onion (minced)
1/4 cup fresh cilantro (chopped)

Steps:

  • In a large skillet, brown and crumble ground beef over medium heat. Add salt and pepper; adjust to your taste. Drain grease.
  • Add red pepper flakes and broth. Simmer 3-4 minutes. Add the cheeses and let melt, stirring occasionally.
  • Once cheese is melted, pour all ingredients into a large serving bowl or crock pot, and stir in beans, red onions, and cilantro. Add tomatoes and green chilies with their juice. (You can omit juice if you want it thicker.)
  • Garnish with tomato, black beans, onions and cilantro just before serving. Serve warm.

1 (8 ounce) package shredded Cheddar Jack cheese
1 (8 ounce) package cream cheese, cubed
1 (8 ounce) container sour cream
1 (4 ounce) can Peppers, hot chili, green, canned, pods, excluding seeds, solids and liquids
2 teaspoons garlic powder
1 teaspoon paprika
1 teaspoon onion powder
½ teaspoon ground red pepper

Steps:

  • Cook sausage in a large pot over medium heat until browned and crumbled, about 5 minutes. Drain off grease and return sausage to the pot. Add Cheddar cheese, diced tomatoes, Cheddar Jack cheese, cream cheese, sour cream, green chiles, garlic powder, paprika, onion powder, and red pepper.
  • Cook over low heat, stirring often, until queso is well combined and has the right consistency, 5 to 10 minutes. Serve immediately or keep warm in a slow cooker on Low setting for an all-day snack.
