I received this recipe from a friend and have been making it ever since. Men love it! This is also a great recipe for a dinner party.

3 tablespoons butter
1 onion, chopped
8 fresh mushrooms, thinly sliced
1 clove garlic, chopped
¼ pound thinly sliced prosciutto, cut into strips
¼ pound thinly sliced hard salami, cut into strips
4 boneless, skinless chicken breast halves
1 cup all-purpose flour
salt and pepper to taste
½ cup dry sherry
1 cup chicken broth
½ cup heavy cream
½ cup marinara sauce
1 tablespoon butter
2 tablespoons chopped fresh parsley

Steps:

  • Melt 3 tablespoons butter in a large heavy skillet over medium heat. Saute onion until soft and translucent. Stir in mushrooms, garlic, prosciutto and salami. dredge chicken in flour, and place in pan. Season with salt and pepper. Cook chicken 5 minutes on each side. Pour in sherry, and cook until liquid is reduced by half. Stir in chicken broth, cream and marinara. Simmer until sauce is reduced to your preferred consistency. Stir in 1 tablespoon butter, and sprinkle with parsley.

1/3 cup all-purpose flour
Kosher salt and freshly ground black pepper
1/4 cup milk
1 large egg, whisked
1 cup panko breadcrumbs
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
4 chicken cutlets
3 tablespoons salted butter
3 tablespoons vegetable oil
Flaky sea salt, for sprinkling

Steps:

  • Put the flour in a wide, shallow bowl and season with a pinch of kosher salt and pepper. In a second shallow bowl, mix the milk and egg. In a third shallow bowl, combine the panko, oregano, rosemary and thyme with a pinch of salt and pepper.
  • Bread the cutlets by dredging them first in the seasoned flour, then dunking them in the egg/milk mixture and finally by pressing them into the herby breadcrumbs so they are completely coated. Set aside.
  • Heat the butter and vegetable oil in a large heavy-bottomed skillet over medium-high heat. Once the butter has melted and the oil is hot, add the cutlets and cook until golden and crisp, 3 to 4 minutes per side. Remove to a paper towel-lined plate and sprinkle over the flaky sea salt. Serve immediately.

1 -2 tablespoon olive oil

Steps:

  • Spread oil in skillet and heat. The oil must be hot.
  • Lay out the chicken cutlets on wax paper.
  • Dip each one in egg, then coat both sides with breadcrumbs.
  • When oil is hot, drop cutlets in skillet.
  • Cook until brown on both sides. To check for "done-ness," cut open the chicken to make sure that the meat inside is cooked.

1 1/2 lbs boneless skinless chicken breasts
1/3 cup all-purpose flour
1/2 teaspoon seasoning salt
1/4 teaspoon black pepper
1 cup fine dry breadcrumbs or 1 cup panko breadcrumbs
1/3 cup grated parmesan cheese
1/16 teaspoon freshly grated nutmeg
2 large eggs, beaten
1 tablespoon cold water
4 tablespoons extra virgin olive oil
2 tablespoons butter

Steps:

  • Rinse chicken breast under cold water and then pat dry with paper towels.
  • Place the chicken breasts in a plastic zip-lok that has been sprayed with a vegetable oil. This helps the the chicken slide while pounding. Using the bottom of a small frying pan, a meat hammer or a rolling pin; pound the chicken breasts carefully until they are about 1/4 inch in thickness.
  • In a shallow dish, add flour, seasoning salt and pepper, mix well.
  • In another shallow dish, add bread crumbs, Padano cheese and grated nutmeg; mix well.
  • In a mixing bowl, add eggs and water and whisk until fluffy.
  • Dip each cutlet in the egg mixture.
  • Then dredge in the flour mixture, coating all areas well.
  • Dip the flour coated cutlet again into the egg mixture; coating well.
  • Now dip the cutlets into the bread crumb mixture; coating well and pressing the crumbs lightly into the cutlets.
  • In a large frying pan, heat the oil and butter on medium-high heat.
  • Fry cutlets for about 1 to 1 1/2 minutes, then turn steaks over and fry for another 1 minute or until cutlets have no pink showing when making a small knife cut in the center to check for doneness.
  • Because the cutlets are thin, they fry very quickly, do not burn.

1/4 teaspoon salt

Steps:

1 cup flour
2 eggs
2 tablespoons water
1 cup seasoned dry bread crumb
3 tablespoons olive oil

Steps:

  • Lightly beat eggs with water and place flour, egg and water mixture and bread crumbs in 3 separate bowls.
  • Dredge chicken with flour and then put in egg mixture. Shake off excess egg.
  • Cover chicken breasts in bread crumbs. Put chicken breasts in refrigerator for 15-30 minutes so crumbs will stick to chicken when frying.
  • Preheat frying pan on medium heat for 1 minute. Add oil and heat for 1 minute. Add chicken breasts and cook for 2 to 3 minutes on each side or until no longer pink inside.
  • Drain on paper towel and serve.
