This is a quick and easy main dish. My kids don't even like cabbage, but they love this. I usually try to serve it with green beans, new potatoes, corn, and a pan of corn bread. They eat over half the pan every time. Also, the longer it stands the better it tastes.

2 pounds ground beef
1 large onion, chopped
1 small head cabbage, chopped
2 (14.5 ounce) cans diced tomatoes
1 (8 ounce) can tomato sauce
½ cup water
2 cloves garlic, minced
2 teaspoons salt
1 teaspoon ground black pepper

Steps:

  • Heat a Dutch oven or large skillet over medium-high heat. Cook and stir beef and onion in the hot Dutch oven until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add cabbage, tomatoes, tomato sauce, water, garlic, salt, and pepper and bring to a boil. Cover Dutch oven, reduce heat, and simmer until cabbage is tender, about 30 minutes.

Unstuffed Cabbage Rolls with Ground Turkey and Rice image

Unstuffed cabbage rolls are a great way to enjoy the European classic without the fuss. This recipe swaps the usual ground beef and pork for ground turkey.

1 TBSP olive oil
1.5-2 lbs ground turkey
1 cup diced yellow onion
3 cloves garlic, minced
1 head of savoy cabbage, roughly chopped into bite-sized pieces
2 14.5 oz cans of diced tomatoes
1 cup tomato sauce
1 TBSP apple cider vinegar (or red wine vinegar)
1 tsp kosher salt, more to taste if desired
1/2 tsp cracked black pepper, more to taste if desired
1 cup cooked rice (I like using basmati)
Sour cream, to serve

Steps:

  • Prepare your rice as per the instructions on the packaging; set aside when done.
  • Heat the olive oil in a large saucepan or Dutch oven over medium heat. Add the ground turkey and onion, and cook until the turkey is no longer pink, about 7-10 minutes; the onions will be nicely cooked at this point as well. Add the garlic, and continue to cook for another minute, stirring occasionally.
  • Add the chopped cabbage, diced tomatoes and their juice, tomato sauce, vinegar, salt, and pepper. Stir the ingredients to mix them well. Bring the mixture to a boil. Reduce the heat to low, cover the pan, and let the ingredients simmer for 20 to 30 minutes, or until the cabbage is tender. When done, stir in the rice until well incorporated.
  • Taste, and season with more salt and pepper if needed.
  • Serve with sour cream, or plain Greek yogurt if you want to keep things light.

This is my version of cabbage rolls using ground turkey instead of ground beef. This dish freezes well, so you can have half for dinner and freeze the other half for another time. Mashed potatoes make a good side dish.

1 cup water
½ cup uncooked long grain white rice
16 large cabbage leaves
2 tablespoons olive oil
1 pound ground turkey
⅓ cup chopped onion
1 egg, beaten
1 (8 ounce) can tomato sauce
½ teaspoon salt
½ teaspoon ground black pepper
1 (8 ounce) can tomato sauce
⅔ (6 ounce) can tomato paste
1 cup water
3 tablespoons brown sugar
2 teaspoons lemon juice
1 teaspoon Worcestershire sauce
2 cups baby carrots, sliced lengthwise

Steps:

  • In a pot, bring 1 cup water and rice to a boil. Reduce heat to low, cover and simmer for 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch casserole dish.
  • Bring a large pot of water to boil. Reduce heat to low and place cabbage leaves in pot. Simmer 4 to 5 minutes, until tender. Drain leaves and set aside.
  • Heat oil in a skillet over medium heat and cook turkey and onion until turkey is brown and onion is tender. Transfer turkey and onion to a bowl, cool slightly, and mix in cooked rice, egg and 1 can tomato sauce. Season with salt and pepper.
  • In a separate bowl, mix 1 can tomato sauce, tomato paste, water, brown sugar, lemon juice and Worcestershire sauce.
  • Scatter carrot slices evenly over bottom of casserole dish. Spread cabbage leaves on a flat surface and place about 2 tablespoons turkey mixture in the center of each leaf. Fold edges of leaves over filling, then roll into logs. Place cabbage rolls seam side down in dish over carrots. Pour sauce evenly over rolls.
  • Cover and bake 1 hour in the preheated oven. Remove cover during last 10 minutes of cook time. Allow to sit 5 minutes before serving.

  • In a large pot or Dutch oven like this one, boil plenty of water. Add cabbage and cook for 5 to 7 minutes until tender (cabbage will turn brighter in color.) Discard water and transfer cooked cabbage to a colander to drain.
  • Wipe empty pot and return to heat. Add 2 tbsp extra virgin olive oil and heat on medium until shimmering but not smoking. Add onions and cook, stirring regularly, for 3 to 4 minutes then add garlic and ground beef (or turkey.) Break the meat apart using a wooden spoon. Raise heat to medium-high. Cook until meat is fully browned, stirring occasionally. Carefully drain any fat, and return to heat. Season with salt and pepper.
  • Now add cooked cabbage, cooked brown rice, chopped herbs, and spices. Season with salt and pepper. Stir to combine.
  • Add diced tomatoes, tomato sauce, and 1 cup of water. Bring to a boil, then lower heat. Cover and let simmer for about 15 to 20 minutes.

  • Meanwhile start preparing the other ingredients. In a large pan heat up the oil, add the bay leaf and onion and cook gently for 3 minutes until softened. Add the meat and cook for 2-3 minutes breaking up the larger pieces.
  • Add the cabbage and stir through. Then add the partly cooked rice, passata, remaining stock, onion granules and plenty of pepper. Stir thoroughly, cover and cook over a medium heat for about 10 minutes, until the cabbage has softened but still has some crunch, stirring occasionally.
