THE OATIEST OATMEAL COOKIES EVER

- Preheat the oven to 375 degrees F. Spread the oats into a single layer on a baking sheet. Bake until lightly toasted, about 20 minutes. Cool the oats for 2 to 3 minutes on the sheet. Grind 8 ounces of the toasted oats in a food processor until they have the consistency of whole-wheat flour, about 3 minutes. Add the baking powder, cinnamon and salt to the food processor and pulse 2 to 3 times to combine. Set aside.
- Line baking sheets with parchment paper. Combine the butter and sugars in the bowl of a stand mixer and mix on medium speed using the paddle attachment until light in color, about 3 minutes. Stop once to scrape down the sides of the bowl. Reduce the mixer speed to the lowest speed and add the vanilla extract and egg. Mix to combine. Slowly add the flour mixture until just combined. Stop once to scrape down the sides of the bowl. Add the remaining toasted oats and the raisins, if using, and mix to combine.
- Scoop the dough with a 1 1/2-tablespoon disher onto the baking sheets, leaving 2 inches between each mound. Bake until the cookies begin to brown around the edges, 12 to 14 minutes, rotating the baking sheets halfway through. Cool on the sheets for 2 minutes, and then move to a cooling rack to cool completely.

- In a large pan, mix together the sugar, butter and the milk. Bring to a boil for two minutes. Turn off the heat. Add in the pudding mix, oats and vanilla. Let stand five minutes. Drop by tablespoon onto wax paper and let cool. Store in an airtight container.

- In a small bowl, combine the eggs, raisins, and vanilla. Cover and chill for 1 hour.
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, cream together the butter, brown sugar, and white sugar. In a separate bowl, combine the flour, salt, cinnamon and baking soda; add to the creamed mixture and stir until all of the dry ingredients are absorbed. Next, stir in the egg and raisin mixture, then stir in the rolled oats and pecans. Dough will be stiff. Drop by teaspoonfuls onto an unprepared cookie sheet.
- Bake for 10 to 12 minutes in the preheated oven, until the edges are golden. Allow cookies to cool 5 minutes on the baking sheet before removing to a wire rack to cool completely.

- Preheat oven to 350 degrees F (175 degrees C). Soak raisins in hot water and set aside.
- In large bowl, sift flour with soda, salt and spices. Blend in rolled oats, sugar and nuts. In a separate bowl, beat eggs with fork and add oil, vanilla, and raisins and water mixture. Pour into dry ingredients, stirring until well mixed. Drop by teaspoonfuls about two inches apart onto ungreased cookie sheets.
- Bake 10 to 13 minutes in the preheated oven, until the edges are golden.

- Heat oven to 350 degrees. Combine the brown sugar, granulated sugar, and butter in an electric mixer fitted with the paddle attachment. Starting with the mixer on low speed and increasing until it is on medium, beat until the mixture is creamy and fluffy, about 5 minutes. Add the eggs and the vanilla extract, then scrape the sides of the bowl with a rubber spatula, and mix to combine.
- Combine the rolled oats, flour, baking soda, baking powder, and wheat germ in a large bowl, and stir to combine. Add the dry mixture to the butter mixture, then mix on low speed just to combine, 10 to 15 seconds. Remove the bowl from mixer stand, and stir in your choice of chocolate chunks, golden raisins, or toffee pieces.
- Line the baking pans with parchment paper. Use a large (2 1/2 ounce) or small (1 1/4 ounce) ice-cream scoop to form balls of dough. Place the balls of dough about 4 inches apart on baking pans. Bake until golden and just set, about 18 minutes for large cookies and 14 minutes for small cookies. Remove from oven; let cool on pan 4 to 5 minutes before transferring to a cooling rack.
VANILLA OAT COOKIES
I came up with this recipe based on another recipe I found in an old cookbook. They are really delicious. The strong toasted oat/vanilla taste combination is a real winner in my book. The salt is there to bring out the flavor. It doesn't make the cookies salty, but if you leave it out, the cookies taste flat and rather dull. A good quality vanilla is essential to this recipe. Toasting the oatmeal is a very important step. It makes the oat flavor stand out and gives them a nice texture. You need to use the old fashioned rolled oats, not the quick-cooking kind. These cookies are very flat and chewy with a crisp (lacy) edge. The edge stays crisp even after storing them for a couple days.

- Spread oats on a baking sheet.
- Toast in a 350 oven 5 minutes or until fragrant.
- Watch closely so they don't burn.
- Cool.
- Meanwhile, melt butter and let cool.
- Beat cooled butter, vanilla paste or vanilla, and egg until light and fluffy on medium speed.
- Add toasted oats, sugars, and salt.
- Mix well.
- Chill dough at least 30 minutes, or until firm.
- Form chilled dough into 1 1/4 inch balls.
- Place balls 2 inches apart on baking sheet lined with parchment paper.
- Flatten each ball into a disk shape, about 1 1/2 inches in diameter.
- Bake at 350 for 12- 14 minutes or until edges are browned.
- Let cookies cool completely on the baking sheet.
