5 c cubed bread crumbs
1 12 ounce of bacon sliced and cooked
1 small onion chopped
2 tsp minced garlic
2 oz crumbled blue cheese
1 1/2 tsp onion powder
1 tsp garlic powder
1 1/2 tsp salt
1 tsp black pepper
2 eggs beaten
1 can(s) 10.5 ounce cream of mushroom soup undiluted
1/2 bottle spicy honey bbq sauce kraft (9 ounces)

Steps:

  • 1. SLICE ONE PACKAGE OF BACON (12 OUNCES) PLACE IN SKILLET , ADD ONE ONION CHOPPED AND MINCED GARLIC COOK TIL DONE AND SET ASIDE TO COOL
  • 2. WHILE YOUR BACON IS COOKING ADD YOUR SPICES, CRUMBLED BLUE CHEESE TOGETHER. WHEN BACON IS DONE AND COOL ADD YOUR BACON TO THE HAMBURGER MIX.
  • 3. ADD REMAINING INGREDIENTS, BREAD CRUMBS, EGGS AND CREAM OF MUSHROOM SOUP. SPRAY BOTTOM OF LARGE BAKING PAN WITH NON STICK SPRAY AND PLACE MEAT INTO PAN. PLACE 1/2 BOTTLE OF KRAFT SPICY HONEY BBQ SAUCE OVER THE TOP. BAKE IN 350 DEGREE OVEN TIL DONE APPROXAMENTLY 1 HOUR.. ENJOY

This meatloaf is full of flavor, and a delicious twist on an old favorite. Bacon, onions, mushrooms, and Swiss cheese are added to ground beef and baked to perfection.

12 ounces chopped raw bacon
1 small white onion, chopped
5 button mushrooms, chopped
1 ½ pounds extra-lean ground beef
1 egg
¼ cup evaporated milk
6 ounces shredded Swiss cheese, divided
½ cup corn flake crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a skillet and cook over medium heat until the pieces are browned. Remove with a slotted spoon to paper towels. Discard all but 1 tablespoon of bacon grease. Stir in onions and mushrooms, and cook until soft. Remove from heat.
  • In a large bowl, stir together beef, egg, and milk. Stir in the onion and mushrooms. Mix in about 4 ounces of Swiss cheese, and all but 1 tablespoon of bacon. Stir in cornflake crumbs, and mix until well blended. Shape into a loaf, and place in a meatloaf pan.
  • Bake in a preheated oven for 1 hour. Drain fat, and sprinkle with remaining cheese and bacon. Return to oven, and bake until cheese is melted, about 5 minutes.

2 pounds lean ground beef
½ pound fresh mushrooms, all minced except for 6
¾ cup fresh bread crumbs
½ cup minced onion
½ cup ketchup
2 eggs, beaten
1 ½ teaspoons salt
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large mixing bowl, combine ground meat, minced mushrooms, bread crumbs, onion, ketchup, eggs, and salt and pepper. Mix well. Spread 1/2 of the mixture into the bottom of a loaf pan. Arrange 6 whole mushrooms stem down into meat. Top with rest of meat, patting to combine both halves.
  • Bake for 1 hour and 45 minutes, or until done. Internal temperature should measure 160 degrees F (70 degrees C) when done.

4 tbsp. unsalted butter
1/2 lb. white mushrooms
Salt and freshly ground pepper
1 medium onion
1 medium green bell pepper
1/2 lb. lean thick-cut bacon
2 1/2 lb. ground veal (not too lean)
1 c. Oyster crackers
1/4 c. ketchup
1/4 c. drained prepared horseradish
1 large egg
1 tbsp. all-purpose flour
1 c. sour cream

Steps:

  • Preheat the oven to 350°F. Melt 2 tablespoons of the butter in a large skillet. Add the mushrooms, season with salt and pepper, and cook over moderate heat until they release their liquid, about 4 minutes. Increase the heat to moderately high and cook, stirring, until browned, about 4 minutes longer. Add the onion, bell pepper, and 1 tablespoon of the butter. Cook over low heat, stirring occasionally, until the onion and bell pepper soften, about 10 minutes. Let cool to room temperature.
  • Mince the chopped bacon in a food processor. In a large bowl, combine the minced bacon with the veal, cracker crumbs, ketchup, horseradish, egg, and the cooled mushroom mixture. Season with salt and pepper and mix thoroughly with your hands. Sauté a small piece of the meatloaf mixture in the skillet over moderate heat and taste for seasoning. Add more salt and pepper to the meatloaf mixture, if necessary. Pack the meat into a 2-quart loaf pan and arrange the halved bacon strips on top.
  • Bake the meat loaf for 1 1/4 hours, or until an instant-read thermometer inserted in the center registers 140°F. Drain the pan juices into a heatproof bowl and skim off the fat; you should have 2/3 cup of juices.
  • Preheat the broiler. Broil the meatloaf 5 inches from the heat for 1 minute, or until the bacon is browned. Let the meat loaf rest in the pan for at least 10 or for up to 30 minutes.
  • Meanwhile, in a small saucepan, melt the remaining 1 tablespoon of butter over low heat. Whisk in the flour until smooth, then whisk in the reserved pan juices. Bring the sauce to a simmer, whisking constantly, until thickened. Add the sour cream and cook, stirring, until hot, about 2 minutes; do not let the sauce boil. Season with salt and pepper. Thickly slice the meatloaf and serve with the sour cream sauce.
  • Make Ahead: The meatloaf can be prepared through Step 2 and refrigerated overnight.
  • Serve with: The velvety texture and soft tannins of a medium-bodied Merlot blend nicely with the mild veal here. Look for the 1999 Columbia Crest Grand Estates from Washington State or the 2000 Château de Rougerie from France.

1 tablespoon olive oil
1 white onion diced
1 portobello cap diced
2 cups shiitake mushrooms, stemmed and julienne cut
2 pounds ground veal
2 eggs, beaten
1/2 cup chopped parsley
Salt and pepper to taste
1 cup bread crumbs

Steps:

  • Preheat oven to 400 degrees. Saute onions and mushrooms until wilted and onions are tender. Let cool completely. Mix all ingredients together, adding bread crumbs a little at a time until desired consistency. Generously oil 1 meatloaf tray. Pack mix into tray tightly to keep holes from being created in the loaf. Cover the tray with aluminum foil. Transfer the meatloaf to a pan with high sides and filled 1/4 with water. Bake for 1 to 2 hours, checking for doneness after 1 hour. Let stand at room temperature before removing from the pan. Cool then cover.;

sunflower oil , for greasing
85g pack sage & onion stuffing mix
1 beef stock cube
8 rashers smoked streaky bacon
500g pack beef mince (avoid very cheap packs; use one with less than 20% fat)

Steps:

  • Heat oven to 180C/160C fan/gas 4 and oil the inside of a 900g loaf tin. Tip the stuffing mix into a bowl, crumble in the stock cube and pour over 300ml boiling water. Give it a good stir, then set aside.
  • Stretch the bacon rashers a little by running the back of a spoon along their length, then use 6-7 to line the base and longest sides of the tin. Chop the rest.
  • Mix the chopped bacon and mince into the stuffing with some black pepper, then press into the bacon-lined tin and bake for 40 mins until firm. Turn out and serve sliced.

2 eggs
2 tablespoons milk
1/4 cup ketchup
1-1/2 teaspoons salt
1/8 teaspoon pepper
1-1/2 pounds lean ground beef
STUFFING:
1/2 pound fresh mushrooms, sliced
1 medium onion, chopped
2 tablespoons butter
2 cups soft bread crumbs
2 tablespoons minced fresh parsley
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large bowl, beat eggs, milk, ketchup, salt and pepper. Add beef and mix well. Pat half of the meat mixture into a greased 9x5-in. loaf pan; set aside. , For stuffing, saute the mushrooms and onion in butter until tender, about 3 minutes. Add bread crumbs, parsley, thyme, salt and pepper; saute until crumbs are lightly browned. Spoon over meat layer; cover with remaining meat mixture and press down gently. Bake at 350° for 1 hour or until a thermometer reads 160°, draining fat as necessary.
