VEGAN BANANA BREAD WITH APPLESAUCE
This easy vegan banana bread is moist, not too sweet, dense, hearty and packed with flavor. Enjoy it hot out of the oven, reheated or cold straight out of the fridge for midnight snacks.

Steps:
- Preheat oven to 350°F. Use a non-stick 8×4 inch bread pan or line a bread pan with parchment paper. (I use the pampered chef stoneware bread pans and the bread always comes out glorious and does not stick. No need to grease the pan.)
- Mash the bananas with a potato masher or fork.
- Sift or whisk together flour, baking soda, salt and spices.
- In a small cup, mix together the almond milk and apple cider vinegar. Let sit for 2 minutes.
- In a separate bowl, cream together the apple sauce and sugars. Add mashed bananas, almond milk and vanilla.
- Add the wet ingredients to the dry. Mix well. Add in nuts, if using.
- Pour batter into pan. Bake for an hour to an hour 10 minutes or until a butter knife inserted in the center comes out clean.

VEGAN BANANA BREAD WITH APPLESAUCE

- Preheat your oven to 350 degrees F and then grease and lightly flour your loaf pan. Set it aside.
- In a large mixing bowl, mash your bananas.
- Add in the applesauce, vegan milk, and vanilla.
- Add in the flour, salt, baking powder and baking soda. Mix well (but don't overmix! It's okay if the batter is slightly lumpy).
- Pour the bread batter into the prepared loaf pan and then bake for 50 min-1 hour or until a toothpick can be inserted into the center and come out clean.
- Let bread rest for 10 minutes in the pan before removing it and transferring the loaf to a wire cooling rack.

- Preheat the oven to 350 degrees F. Line the bottom and two long sides of a 9-by-5-by-3-inch loaf pan with parchment, leaving a 2-inch overhang on each long side, and lightly coat with cooking spray.
- Whisk the flour, baking soda and salt together in a medium bowl. Whisk the bananas, sugar, yogurt, oil and vanilla together in another medium bowl. Gently fold the wet ingredients into the dry ingredients with a rubber spatula until the batter just comes together (it's OK if there are lumps). Transfer the batter to the prepared loaf pan and bake until a tester inserted in the center comes out clean, 55 to 60 minutes; tent the loaf with foil if it is browning too quickly. Cool the loaf in the pan on a wire rack for 30 minutes, then lift it from the pan by the parchment overhangs and cool completely on the rack. Store the loaf in an airtight container at room temperature for up to 5 days.

- Heat oven to 350° F. Grease bottom only of 9 x 5 x 3-inch loaf pan.
- In large bowl, beat sugar, bananas, coconut oil and vanilla until smooth. Stir in almond milk and vinegar. Add flour, baking soda and salt; stir just until moistened. Stir in walnuts. Pour into pan.
- Bake 1 hour to 1 hour 10 minutes or until toothpick inserted in center comes out clean and crack in top of loaf appears dry. Cool 10 minutes. Loosen sides of loaf from pan; remove from pan, and place on cooling rack. Cool completely, about 1 hour, before slicing. Wrap cooled bread in plastic wrap, and store in refrigerator.

- Grease a standard loaf pan with vegetable oil or spray.
- Mix all the dry ingredients in a bowl and gently stir.
- In a separate bowl, mix the applesauce, brown sugar, vanilla, and oil until evenly combined.
