CHOCOLATE CHIP AND BLUEBERRY MUFFINS
A very scrumptious muffin with lots of chocolate chips and blueberries in every bit of this muffin which would be good for breakfast or brunch.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper liners.
- Mix flour, baking powder, and baking soda together in a bowl. Whisk cream, sugar, chocolate chips, eggs, oats, and blueberries together in a separate bowl until well mixed. Stir flour mixture into cream mixture until batter is well mixed; pour into the prepared muffin cups.
- Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 20 minutes. Cool muffins in muffin tin for 10 minutes before removing to wire rack to cool completely.

Steps:
- In a mixing bowl combine flour, sugar, salt and baking powder.
- Add in milk and oil. If you find the batter is too thick, slowly add more milk until you are happy with the consistency.
- Fold in blueberries, chocolate chips and chia seeds. Save some chocolate chips for topping the Muffins.
- Pour into paper liners in a muffin or cupcake pan. Top with remaining chocolate chips.
- Bake at 400 for 22-25 minutes.
- Let cool for about 20 minutes on a cooling rack and enjoy :).

- Into a large mixing bowl, whisk together the coconut yogurt, maple syrup, lemon juice and vanilla extract. Add in the oat flour, almond flour, potato starch and salt. Sift in the baking powder and baking soda and stir until just combined. Fold in the blueberries and chocolate chips.
- Divide between 8 muffin cups and then bake for 5 minutes. Reduce the temperature to 350 F and then bake for another 18-20 minutes or until cooked through. Check by inserting a toothpick into the centre of the muffin, it should come out clean (few cooked crumbs are okay). As well, gently press the top of a muffin and check for it to spring back up. If it does, they're ready to be taken out.
- Let them cool in the pan for 2-3 minutes and then transfer to a wire rack to cool completely. Enjoy!

- Preheat the oven to 375F and spray a regular size muffin tin with coconut oil. I would suggest using a silicon muffin tray for easy removal.
- In a small bowl or ramekin, make your vegan egg using Bob’s Red Mill. Follow the instructions on the product and set aside to prepare.
- Into a medium sized bowl add your sugar and melted butter. Stir till well combined. Then add in your milk, egg replacement and vanilla. Stir till smooth and then transfer to your dry ingredients. Give it a stir ensuring no large clumps and everything it smooth.

- Preheat the oven to 400 degrees F / 220ºc. In a large bowl, mix all the dry ingredients and keep aside. In another bowl, mix the almond milk, flax meal, yogurt and vinegar and let sit for 2 minutes. Add the rest of the wet ingredients and mix well until the sugar is combined.
- Add the wet to the dry and and mix till just about combined. Do not let the mixture sit too long at this point as it keeps thickening. Toss the blueberries in 1 tbsp oat flour to coat and then add to batter. Add the chocolate chips. Fold in to just combine. Spoon the batter into lined or greased muffin pan.
- Bake for 21 to 22 minutes or until a toothpick from the center comes out clean. (frozen berries will need a minute or 2 longer - 22 to 23 minutes). Remove the muffins from the pan, cover with parchment or towel while they cool for 10 minutes. (important to cover the muffins so they dont dry out). Serve.
