Vegan Caesar Dressing (Oil Free) image

Homemade vegan Caesar dressing, made in less than 5 minutes with simple ingredients. It's oil-free, so creamy and the perfect salad dressing.

1/2 cup vegan Parmesan cheese (8 tbsp)
1/4 cup water (4 tbsp)
2 tbsp tahini
1 tbsp ground flax seeds
1 tbsp tamari or soy sauce
1 tbsp apple cider vinegar
1 tbsp lemon juice
1 tbsp capers
1 tsp mustard
1/8 tsp ground black pepper
1 clove of garlic

Steps:

  • Add all the ingredients to a blender and blend until smooth.
  • Use immediately or keep leftovers in a sealed container in the fridge for 5 to 7 days.

This Caesar dressing is creamy, garlicky, briny, tangy but yet smooth and it is sure to please your palate on so many levels.

1 12 ounce box Silken Tofu - soft - for salad dressings
1/2 cup water (or 1/2 cup unsweetened plant milk)
1 Tablespoon JOI Oat Milk Powder (see note above)
1 Tablespoon Chia Seeds - white or black
1 teaspoon Kelp granules - rounded teaspoon
1 Tablespoon Capers low sodium 0r soak the capers in cold water to remove some of the sodium
3 Tablespoons Apple Cider Vinegar
2 Tablespoons Westbrae no salt added mustard or Dijon mustard
6-8 garlic cloves
2 Medjool dates about 1 ounce or 4 Deglet Noor Dates or 1/4 cup raisins
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 tablespoons Nutritional Yeast - optional
1/2 teaspoon Salt Substitute - we use WYW Stardust
freshly ground black pepper to taste

Steps:

  • Put all ingredients in the blender container and process at high speed for 1 minute or until well blended and creamy smooth.
  • Transfer dressing to a storage container and store in the refrigerator for 7 days. If it lasts that long! We eat it up pretty quickly around here.

  • Add all of the ingredients to your blender or food processor and blend until very smooth and creamy. I used my Vitamix, but I'm sure any blender or even a food processor would work since pine nuts are a soft nut. If you have a weak blender, I would suggest soaking the cashews (if using) overnight, drain and rinse, so your dressing isn't gritty.
  • Place in the fridge to chill for 30 minutes. It will be perfect for salads then as it gets well chilled and thickens up some.
  • I used an Italian salad blend and added some broccoli, pine nuts, extra black pepper and nutritional yeast on top. However, feel free to use whatever greens you like.
