CORONATION CHICKPEAS
A vegan twist on a classic, this coronation chickpea recipe is so easy to make and a fantastic healthy, flavour-packed lunch.

Steps:
- Heat a little oil in a pan, then add your chickpeas and curry powder, stirring to coat. Cook the chickpeas for about 5 minutes to help them soften. This isn't an essential step but I find it really helps the curry flavour deepen as well.
- Remove the chickpeas from the heat and mash about two-thirds of them with a fork, then stir in the lemon juice, creme fraiche and mango chutney, mashing more chickpeas as you need to so you have a nice creamy but chunky texture.
- Stir in the finely chopped red onion, coriander, and salt and pepper. Adjust your ingredients according to taste.
- Serve in an open-faced sandwich or bagel, or add to a salad for a nice spicy kick!
VEGAN CORONATION CHICKPEA
When I first went vegetarian, I really missed coronation chicken sandwiches and decided to experiment with different ideas. This is really yummy, and I prefer it to the original! Great as a sandwich filler, on jacket potatoes, with salad or whatever you want. Can also add 1/2 cup grated carrot for texture and more nutrition, or add more apricots.

- Heat the oil in a frying pan and add the chickpeas, onions and garlic with some seasoning. Gently cook for a few minutes until the onions begin to soften, before adding the sultanas and curry powder. Continue to cook, stirring, until the spices are fragrant. Leave to cool.
- Once cooled, lightly mash the chickpeas so that some still remain whole. Stir in the mango chutney, mayonnaise and season to taste.
- Spread the mixture liberally over the bread, adding lettuce and onion. Serve immediately.

This recipe was given to me by my boss, who is Asian. It has been passed through generations of her family so as you can imagine it is the real deal. Very healthy and super tasty. You can serve it as a side or main. Serve with either rice, bread, bhaji, or samosas.

- Drain and rinse chickpeas under cold running water. Place in a bowl, cover with cold water, and stir in baking soda. Soak for 10 minutes. Drain and rinse thoroughly.
- Heat oil in a pot and cook onion until soft and translucent, about 5 minutes. Stir in garlic-ginger paste, cayenne, salt, turmeric, and garam masala. Cook and stir until spices are well absorbed by the onion, about 2 minutes.
- Add tomatoes and frozen spinach; stir to combine. Add chickpeas and stir gently. Simmer until flavors are well combined, about 20 minutes. Add a little water if sauce is too thick.
