VEGAN EGGNOG CHEESECAKE
The festive flavors of nutmeg and brandy are transformed into an eggnog cheesecake in this decadent but still slightly healthy vegan recipe.

- Preheat the oven to 350 F. Drain the tofu and put it and the Tofutti cream cheese into your food processor. Blend until smooth. Add the sugar and eggnog, and process again until sugar is dissolved, about 3 minutes. Add the remaining ingredients (except crust) and process until completely smooth, about 3 more minutes. Pour into the pie crust and bake in the middle of the oven for about 55 minutes (do not allow to brown). Filling will be slightly jiggly, not completely set until chilled.
- Remove from oven and allow to cool. Refrigerate until completely chilled (the longer, the better). Serve sprinkled with additional grated nutmeg.

- Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan. , In a small bowl, combine the cracker crumbs, sugar and butter. Press onto the bottom of pan. Place on a baking sheet. Bake at 325° for 10 minutes. Cool on a wire rack., In a large bowl, beat the cream cheese, sugar and flour until smooth. Add eggs; beat on low speed just until combined. Gradually stir in the eggnog, extract and nutmeg. Pour filling over crust., Place springform pan in a larger baking pan; add 1 in. of hot water to larger pan. , Bake at 325° until center is just set and top appears dull, 45-50 minutes. Remove springform pan from water bath. Cool on a wire rack for 10 minutes. Loosen sides from pan with a knife; cool 1 hour longer. Refrigerate overnight, covering when completely cooled. If desired, top with whipped cream, then sprinkle with nutmeg.

- Preheat oven to 350 F (180 C). Line a 9 inch springform pan with parchment paper or spray with oil.
- Into a food processor, add in the nuts and oats and process until grounded. Then add in almond butter and dates and blend until a dough forms. Press the dough into the springform form. Use the back of a measuring cup or a flat potato masher to press flat.
- In the meantime, add all the filling ingredients into a high speed blender. Taste and add more spices and sugar to taste. Pour the filling into the springform and then bake in the oven for 40-45 minutes.

- To make the crust, add the oats, pecans, ginger, coconut sugar, salt, cinnamon and nutmeg to your food processor and blitz to a fine crumb consistency. Add the cashew butter and blend again until the mixture sticks together to form a dough consistency.
- Line the base of a 7" springform cake pan with parchment paper and press the dough into the base of the pan, compacting it with a spatula. Set aside.
- For the filling, add all of the ingredients to your high speed blender. Blend on high for a few minutes until the mixture is completely smooth and creamy, with no lumps or grit.
- Place the cake in the freezer to set for a minimum of 6 hours or overnight. Once set, remove the cake from the tin whilst still frozen.
