VEGAN LUMPIA ROLLS WITH SWEET & SPICY DIPPING SAUCE

- Put the soy crumbles in a bowl and add ½ cup heated vegetable broth and stir well, if the mixture seems too dry add more of the broth untilyou get a soft slightly chewy texture. Set aside.
- Grate the carrots, and chop the cabbage, green onion, cabbage and garlic finely. (Alternatively,you could use a food processor for this step. Just be careful, you want a fine texture but not a mushy mix.)
- Mix the crumbles with the vegetables in a big bowl and add the soy sauce, salt and pepper, and combine well.
- Make the dipping sauce by combining all ingredients in a small bowl and set aside.
- Heat a couple of cups of water on the stove until hot, but not boiling. Use a wide pan, like a frying pan since you will be dipping the wraps into this.
- Set up your workspace by putting a clean kitchen towel on your countertop and preparing a large baking sheet lined with parchment paper to hold the completed rollsbefore frying. Also line a large plate with paper towels to put the lumpia after being fried. to drain the oil.
- Pour the avocado oil into a wok or a large sauce pan, and allow the oil to gently heat to approximately 350 F while you make the rolls.
- Dip the rice paper carefully into the heated water, rotating if necessary, until it is evenly soft, and gently move it to the kitchen towel to absorb most of the water while you roll them.
- Put about 3-4tablespoons of the filling along the bottom third of the rice paper and roll up, tucking in the sides, until you have a roll roughly 2"X 5". Set on the parchment lined baking sheet. Repeat until you have about 24 rolls.
- Once the oil is hot enough, ideally 350F, add the rolls to the oil, as many as you can fit without overcrowding, and fry turning often with a chopstick to ensure even cooking. After about 10 minutes they should be lightly browned on all sides, with some darker spots. Rice paper doesn't fry as evenly as wheat wrappers do, but they do bubble and get super crispy! Repeat moving the finished ones to the paper towel lined plate.
- Serve hot with the dipping sauce

- Stir the vinegar and sugar together in a small saucepan over medium heat until the sugar dissolves completely, 7 to 10 minutes; add the salt, reduce heat to low, and simmer until the mixture thickens slightly, about 5 minutes. Remove from heat and stir the chili garlic sauce into the mixture. Allow to cool slightly before serving.
