2 teaspoons vegan chocolate chips (such as Enjoy Life®)

Steps:

Whisk whole wheat flour, white sugar, cocoa powder, baking soda, and salt together in a microwave-safe mug. Stir in water, canola oil, and vanilla extract. Fold in chocolate chips.
Microwave until fully cooked, 50 seconds to 1 minute.

1 tablespoon Peanut Butter

Steps:

In a bowl place dry ingredients (flour, cocoa, baking powder, and whisk together
Add wet ingredients (maple syrup, peanut butter, water) whisk. You want the batter to be quite loose, check out the video to see the texture. You may need to add a little extra water depending on the nut butter you have used or any ingredient substitutions you have made
Put into a large mug (at this stage you can choose to add dark chocolate drops, I add some into the middle and a few on the top to make it that little bit more indulgent
Prepare the microwave, either pop a paper towel down in the microwave or a small plate for you to sit the mug on, just in case there is any overflow--- I haven't had any overflow, but I do use a nice large mug
Microwave for 40 seconds to start. In my microwave (a 1100w microwave) this is perfect and still a bit gooey, you may need a little more or less so test it. Remember with a microwave recipe it often cooks a little more on sitting, so it's best to start with a shorter time frame
Serve with a dollop of creaminess, ie ice cream, vegan nice cream, yogurt, coconut yogurt, whichever tickles your fancy

In a bowl, whisk together flour, coconut sugar, and unsweetened cocoa powder for 30 seconds or until evenly combined, and no lumps appear.
Whisk in the liquid ingredients: almond milk and oil. Whisk until the brownie batter forms. It should take 30 seconds. You want to obtain a consistent brownie batter with no lumps, shiny and thick like a regular brownie batter.
Stir in the vegan chocolate chips and transfer the brownie batter into a 9 cm (3.5 inches) oven-proof ramekin, depending on the cooking method you chose. If you like, sprinkle extra chocolate chips or raspberries (or both!) on top of the brownie before baking.
Place the mug or ramekin in the center of your microwave, and microwave on high (800W) for 90 seconds. Otherwise, bake in the oven at 180°C (350°F) for 8-12 minutes or until the brownies are set, and a toothpick inserted in the middle comes out with little to no crumbs.
