VEGAN TOFU MEATBALLS



Vegan Tofu Meatballs image

This is by far the best Vegan Tofu Meatballs smothered in homemade sweet and sour sauce that I have eaten! Tofu meatballs are perfect for someone eating meatless meals for the first time!

1 package extra-firm tofu mashed
1 cup gluten-free breadcrumbs or 4 slices or bread
1 cup walnuts finely chopped
1/4 cup Bragg's liquid aminos
2 tablespoons nutritional yeast flakes
2 tablespoons tapioca starch or cornstarch
1 tablespoon granulated onion powder
2 cloves garlic minced
1 teaspoon salt
Pinch of rubbed sage
Pinch of oregano
Pinch of basil
1 cup pineapple juice
2 tablespoons tomato sauce
2 tablespoons coconut sugar
1 tablespoon tapioca starch or cornstarch
1/4 teaspoon onion powder
1/8 teaspoon garlic powder
Pinch of salt

Steps:

  • Preheat oven 350 degrees F. Grease baking sheet or parchment lined baking sheet and set aside. Make breadcrumbs by blending 1-inch pieces of bread in a blender or food processor, scoop breadcrumbs into a large mixing bowl. Stir in walnut, sage, oregano, and basil.
  • In a food processor or blender, place tofu, liquid amino's, nutritional yeast flakes, tapioca starch, onion powder, garlic, and sea salt and process.
  • Pour blended mixture into the bowl with seasoned breadcrumbs and mix well. Form into balls and bake for 30 minutes turning meatballs after 15 minutes. Transfer tofu meatballs to a serving dish and spoon sweet and sour sauce over the tofu meatballs and serve.
  • In a medium saucepan add pineapple juice, tomato sauce, sugar, tapioca starch, onion, garlic and sea salt, whisk.
  • Heat sauce over medium-high heat until it comes to a boil. Whisking constantly, reduce heat and simmer until sauce thickens.

These delicious meatball alternatives are great with pasta and tomato sauce. They are gluten-free and sugar-free and appropriate for the 21 day Quantum Wellness Cleanse. They are a bit fragile so be careful when removing them from the pan. This recipe is only slightly adapted from the Post Punk Kitchen website.

300 g tofu, extra-firm
1 small onion, chopped fine
3 tablespoons soy sauce, gluten-free
3 tablespoons peanut butter, no sugar added is best
1/2 cup breadcrumbs, gluten-free
rice flour, to roll the balls in
oil, to fry the balls in

Steps:

  • Combine all ingredients except for the rice flour and oil. Mix thoroughly by hand. Don't use a mixer because the mixture will be too soft and gooey.
  • Roll the tofu balls in the rice flour and then fry until golden brown all over - about 5 minutes.

2 cubes vegan chicken-flavored stock
2 cups boiling water
1 clove garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
½ teaspoon dried sage
1 pinch salt, or more to taste
1 (12 ounce) package tofu, cut into 1-inch cubes
1 ½ cups all-purpose flour, divided
2 teaspoons baking powder
1 teaspoon salt
¼ teaspoon ground black pepper
5 tablespoons water
2 tablespoons flaxseed meal
¾ cup soy milk
1 ½ tablespoons vegetable oil, or as needed

Steps:

  • Dissolve vegan stock cubes in the boiling water in a bowl. Add garlic, thyme, rosemary, sage, and 1 pinch salt. Cut tofu into 1-inch cubes and add to the marinade. Cover with plastic wrap and refrigerate, 4 hours to overnight.
  • Mix 1 1/4 cups flour, baking powder, 1 teaspoon salt, and pepper together in a bowl. Place remaining flour in a shallow bowl.
  • Stir 5 tablespoons water and flaxseed meal together in a separate bowl. Let "egg" stand until thickened, about 5 minutes. Add soy milk; mix well. Stir into the flour mixture until batter is well combined.
  • Heat oil in a large skillet over medium heat.
  • Take the tofu pieces and dip them in bowl of flour; move into the batter to coat. Fry in the hot oil until browned, 2 to 4 minutes per side.

1/4 cup fresh parsley, minced
2 teaspoons onion powder
1 teaspoon garlic powder
1/2 cup cornstarch

Steps:

  • Combine first 6 ingredients in medium mixing bowl and use your hands to mix well. Shape into 1 1/2" balls, and roll in mixture of corn starch and nutritional yeast.

1 (14 ounce) package firm tofu
1 green onion, minced
2 tablespoons cornstarch
1 teaspoon salt
1 teaspoon garlic powder
½ teaspoon ground white pepper
vegetable oil for frying

Steps:

  • Place carrot into a pot and cover with salted water; bring to a boil. Cook until carrot is tender, 1 to 2 minutes. Drain.
  • Mash tofu in a bowl using a fork. Add cooked carrot, green onion, cornstarch, salt, garlic powder, and black pepper. Form mixture into little balls.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Add the tofu balls. Fry, stirring occasionally, until golden brown, 3 to 6 minutes.
