These vegetarian burgers are delicious! Your carnivorous friends will be impressed. My favorite way to serve is on a whole-wheat bun with garlic-lemon mayonnaise, fresh raw spinach, sliced tomato, and caramelized onions!

1 (15 ounce) can black beans, rinsed and drained
¼ cup quinoa
½ cup water
½ cup bread crumbs
¼ cup minced yellow bell pepper
2 tablespoons minced onion
1 large clove garlic, minced
1 ½ teaspoons ground cumin
½ teaspoon salt
1 teaspoon hot pepper sauce (such as Frank's RedHot®)
1 egg
3 tablespoons olive oil

Steps:

  • Bring the quinoa and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa is tender and the water has been absorbed, about 15 to 20 minutes.
  • Roughly mash the black beans with a fork leaving some whole black beans in a paste-like mixture.
  • Mix the quinoa, bread crumbs, bell pepper, onion, garlic, cumin, salt, hot pepper sauce, and egg into the black beans using your hands.
  • Form the black bean mixture into 5 patties.
  • Heat the olive oil in a large skillet.
  • Cook the patties in the hot oil until heated through, 2 to 3 minutes per side.

We love all kinds of veggie burgers, but this is one of our favorites. Bulgur can be substituted for the quinoa if desired.

¾ cup water
½ cup quinoa
1 carrot
1 (15 ounce) can garbanzo beans, drained and rinsed
6 small green onions, chopped
¼ cup whole wheat bread crumbs
1 egg, slightly beaten
1 clove garlic, minced
1 teaspoon ground cumin, or to taste
¼ cup peas
¼ cup corn kernels
2 tablespoons olive oil
½ cup plain yogurt
3 tablespoons tahini
1 lemon, juiced
1 tablespoon chopped fresh cilantro, or to taste
1 teaspoon hot Madras curry powder

Steps:

  • Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes.
  • Process carrot in food processor until roughly chopped; add quinoa, garbanzo beans, green onions, bread crumbs, egg, garlic, and cumin. Pulse quinoa mixture until just mixed; transfer to a bowl.
  • Stir peas and corn into the quinoa mixture; refrigerate until mixture comes together, about 15 minutes. Form quinoa mixture into patties.
  • Heat olive oil in a skillet over medium heat; fry patties until golden brown, 4 to 5 minutes per side.
  • Stir yogurt, tahini, lemon juice, cilantro, and curry powder together in a bowl. Serve burgers with tahini sauce.

This veggie burger is packed with veggie and quinoa goodness including lots of meatless protein. A great alternative to a beef burger and just as hearty and filling. It can be cooked on the grill or baked in the oven. The egg and cheese may be left out to make this recipe vegan.

½ cup quinoa
1 cup water
2 teaspoons olive oil
4 carrots, peeled and minced
2 stalks celery, minced
½ red bell pepper, minced
1 onion, minced
4 cloves garlic, minced
2 tablespoons minced fresh ginger root
2 cups minced fresh mushrooms
1 (19 ounce) can kidney beans, rinsed and drained
½ bunch fresh dill, chopped
2 cups chopped fresh spinach
1 egg
½ cup dry bread crumbs
2 tablespoons sesame oil
4 slices shredded mozzarella cheese
salt and ground black pepper to taste
1 tablespoon olive oil

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Combine quinoa and water in a saucepan and bring to a boil. Reduce heat to low, place lid on saucepan, and cook until water is completely absorbed, about 15 minutes; Remove from heat and set aside to cool.
  • Heat 2 teaspoons olive oil in a skillet over medium-high heat. Cook and stir carrots, celery, red bell pepper, onion, garlic, ginger, and mushrooms in the hot oil until softened, about 10 minutes; set aside to cool.
  • Mash kidney beans with a fork in a large bowl; add quinoa and the carrot mixture to the means and mix.
  • Mix dill, spinach, egg, bread crumbs, sesame oil, mozzarella cheese, salt, and pepper into kidney bean mixture; shape into 8 patties.
  • Brush the 1 tablespoon olive oil evenly both sides of each patty.
  • Arrange the patties into a large baking dish.
  • Grill on preheated grill until hot in the center, 7 to 8 minutes per side.

My first taste of quinoa was when we dined in the Stable Cafe at the Biltmore. It was so tasty I asked the waitress what it was and she gave me the recipe. I would recommend using this Recipe #16399 before boiling your quinoa. Prep time does not include toasting your quinoa prior to assembly. These can be served on hearty buns or alone. I made 7 generous sized burgers. I cooked & froze the extra burgers for another meal. They are a bit labor intensive. I made ahead, chilled in layers of foil.

1 zucchini, peeled sliced thickly lengthwise
1 squash, peeled if necessary, sliced, I did not use
1 red bell pepper, remove seeds & slice lengthwise into 6 strips, can substitute bottled roasted peppers
1 red onion, peeled and sliced
1 large portobello mushroom cap, substitute several small
1 tablespoon olive oil for brushing vegetables, more for cooking the burgers
1 cup quinoa, raw
4 large eggs, slightly beaten
1 bunch parsley, stems removed, chopped, approx. 1 Cup loosely packed
5 -10 garlic cloves, minced, more or 5 -10 less depending on size cloves, I used 5
1 cup breadcrumbs, plain
1 cup oats, several quick pulses in a food processor
1 tablespoon lemon juice
salt, to taste, I used 1 1/2 teaspoons
pepper, to taste, I used generous dusting

Steps:

  • Peel and slice vegetables. Brush lightly with olive oil for grilling. Grill until tender and caramelized. Cool down and rough to medium chop.
  • Recipe #16399 is suggested before boiling your quinoa.
  • In the mean time, bring 2 cups of water to a boil. Cook quinoa for 7 minutes. Drain all excess water and cool. NOTE: you are not to fully cook the quinoa. 7 minutes is the suggested time and what I used. It give the burgers a great texture.
  • Combine all ingredients. If mix is too wet, add more oats.
  • Form patties. I used a patty press. Cook in a lightly oiled nonstick pan.
  • Serve with your favorite condiments on a toasted bun.

This vibrant burger is made with both cooked and uncooked vegetables. The egg is optional; if you don't use it, be careful when flipping the patty so that it doesn't fall apart.

2 cups cooked quinoa
2 tablespoons canola oil
6 fresh shiitake mushrooms, stemmed and sliced thin
1 tablespoon minced fresh ginger
2 garlic cloves, minced
1 cup finely chopped red bell pepper
1/4 cup chopped cilantro
1 cup finely chopped arugula
Salt to taste
1 15-ounce can white beans, drained and rinsed
1 to 2 tablespoons fresh lime juice (to taste)
1 egg (optional)
Soy sauce to taste (optional)
Freshly ground pepper

Steps:

  • Preheat the oven to 375 degrees. Place the cooked quinoa in a large bowl.
  • Heat 1 tablespoon of the oil over medium-high heat in a heavy skillet and add the sliced shiitakes in one layer. Cook, without stirring, for 1 minute, and then stir until the mushrooms are beginning to soften. Add the ginger, garlic and a generous pinch of salt and continue to cook for another minute. Remove from the heat and add to the bowl with the quinoa. Stir in the red pepper, cilantro and arugula.
  • In a food processor fitted with the steel blade, or in a bowl using a fork or a potato masher, purée the white beans with the lime juice and, if using, the egg. Add to the quinoa mixture and stir everything together. Season to taste with soy sauce or salt and pepper.
  • Begin heating a heavy ovenproof skillet over medium-high heat. Seasoned cast iron is good, and so is a heavy nonstick pan that can go into the oven. Moisten your hands lightly and shape 4 large or 6 smaller patties. Add the remaining tablespoon of oil to the pan and, working in batches if necessary, cook the patties for 2 minutes on one side, until nicely browned. Carefully turn over and place in the oven. Bake 10 to 15 minutes, until the patties are lightly browned and don't fall apart. Remove from the heat and serve, with or without buns, ketchup and the works.
