- For the vegetable rollHeat 1 tbsp oil in a broad non-stick pan, add the ginger - garlic paste and green chillies and sauté on a medium flame for few seconds.Add the onions, capsicum, carrot, french beans and tomatoes, mix well and cook on a medium flame for 5 minutes, while stirring occasionally.Add the coriander, potato, rajma, chilli powder, garam masala, tomato ketchup, bread and salt and mix well and cook on a medium flame for 2 minutes, while stirring occasionally.Transfer it in a plate cool completely.Add the cheese and mix well with your hands.Divide the mixture into 5 equal portions and roll out each portion into a cylindrical roll.Heat a tava (griddle) and grease it with 1 tsp of oil. Place 3 on it rolls and cook it till they turn golden brown in colour from all sides.Repeat step 7 to cook 2 more rolls. Keep aside.

- To prepare vegetable mayonnaise, tie the curd in a cloth for 2 hours to remove excess water.
- Mix the cream, cucumber, salt, pepper and cheese to make a thick paste.
- For the cutlets, boil the potatoes, carrots and peas till soft.
- In a pan, add oil and saunf with finely cut onions, ginger and chillies.
- Add the mashed vegetables with salt, chilli powder, garam masala, maida, peanuts and cilantro.
- Mix well.
- Roll them and make them into lengthwise cutlets.
- dip them in milk or cornflour.
- Dust with breadcrumbs.
- Shallow fry in a flat pan adding oil as and when required till they become crisp and golden.
- Cut the buns lengthwise and apply the mayonnaise generously.
- Place a cutlet and a lettuce leaf inside and close it tightly.
- Serve with hot and sour sauce.
