The Vegetarian Potato Hash Recipe can be prepared as a dish for breakfast, lunch or dinner. The Vegetable Potato Hash can even be served as an appetizer or as a side dish for dinner. You can make a lot of variations of the hash by adding squash, sprouts, turnips or carrots as any of your favorite vegetables. Number Of Ingredients 12

200 grams Button mushrooms , quartered
1 Green Bell Pepper (Capsicum) , chopped
1/2 cup Sweet corn , steamed
1 Onion , finely diced
3 Potatoes (Aloo) , diced small
1 tablespoon Tomato Ketchup
2 teaspoon Soy sauce
1/2 teaspoon Italian seasoning
1 tablespoon Fresh Thyme leaves , minced
1 tablespoon Water
Salt and Pepper , to taste
Extra Virgin Olive Oil , for cooking

Steps:

  • To begin making the Vegetarian Potato Hash, first get all the ingredients chopped and ready and keep them by the side.
  • Heat 2 tablespoons of oil in a non stick skillet on low heat. Add the onions, the vegetables, sprinkle some salt and cook, stirring occasionally, until golden. You can optionally sprinkle some water, cover the pan and cook until the potatoes are cooked through.
  • Once cooked, transfer the cooked vegetables to a plate.
  • In the same pan add another tablespoon of oil, add the diced potatoes and cook. Stir occasionally and cook for about 13 minutes or until they form a golden crust.
  • Meanwhile in a small bowl, mix the ketchup, soy sauce, water, Italian seasoning, minced thyme and stir well.
  • Add the cooked mixed vegetables to the skillet along with potatoes. stir in the ketchup mixture and cook, stirring frequently. Cook for about 5 to 7 minutes or until the flavors blend in and the hash has browned nicely. Once done the Vegetarian Potato Hash is ready to be served.
  • Serve the Vegetarian Potato Hash warm with Egg White Omelette with Spinach and Muskmelon (Kharbuj) Juice for breakfast.

In response to my friends who have chosen to be vegetarian, I took this recipe that I grew up with and modified it to be vegetarian and be full of flavour. It's slightly more work than the meat version, but I think it turned out to be worth the extra effort.

1/2 cup dried beans (Pinto, Navy, Black, etc.)
1 onion
1 green bell peppers or 1 red bell pepper
3 tablespoons oil

2 cups salsa
1/2 cup rice, uncooked
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • soak beans overnight.
  • cook beans until tender, drain.
  • make roux.
  • using 2 Tbsp.
  • oil, brown the flour until dark brown.
  • dice onion and bell pepper.
  • saute onion and pepper until onion is golden.
  • add all ingredients to casserole dish.
  • bake 45 min.
  • @350 F.

1 cup water
1 cup uncooked instant rice
1 pound lean ground beef
2 onions, chopped
1 large green bell pepper, chopped
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
2 tablespoons chili powder
1 (8.75 ounce) can whole kernel corn, drained
salt and pepper to taste
3 slices processed American cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart (8 inch round) casserole dish.
  • In a medium saucepan, bring 1 cup of water to a boil. Stir in instant rice, cover and remove from heat. Let sit for 5 minutes.
  • In a medium skillet over high heat, brown ground beef with onions and green pepper. Stir in diced tomatoes, tomato sauce and chili powder. Simmer for 20 minutes.
  • Stir cooked rice into the beef mixture. Mix in the corn, salt and pepper.
  • Pour the mixture into prepared casserole dish. Cut the American cheese slices in half and place over the top.
  • Bake in preheated oven for 15 to 20 minutes or until cheese is melted and bubbly.

This is a quick recipe my mother made a lot when I was growing up. It has a great flavor! Serve over rice.

1 ½ pounds ground beef
1 medium onion, chopped
1 (28 ounce) can diced tomatoes with juice, pureed
2 tablespoons chili powder, or to taste
1 tablespoon Worcestershire sauce, or to taste
salt and ground black pepper to taste

Steps:

  • In a skillet over medium heat, brown the ground beef with the onion, until the meat is no longer pink, and the onion is soft; drain fat.
  • In a Dutch oven or large saucepan, combine the ground beef mixture, and pureed tomatoes. Season with Worcestershire sauce, chili powder, salt and pepper. I just keep adding stuff until it tastes good. Bring to a boil, and let simmer for 15 to 20 minutes to blend flavors. Serve over rice.

1 lb lean ground beef
1/2 onion, chopped
1 celery, chopped
15 ounces canned tomatoes, diced
1/2 green pepper, chopped
1/2 cup uncooked rice
1 teaspoon minced garlic
1/2 teaspoon chili powder
2 teaspoons salt
1/4 teaspoon pepper
1 1/2 teaspoons parsley

Steps:

  • Lightly spray a 9x13-inch baking dish with a cooking spray (Pam, or similar); set aside. Preheat oven to 375º.
  • Sauté the beef, onion and celery in a large skillet over medium heat until no pink remains in the beef and the onions are clear. Place the meat mixture in a colander to let the excess grease drain.
  • Return the meat mixture to the skillet. Add the tomatoes, green pepper, rice, garlic and all remaining ingredients (spices/herbs) to the skillet. Stir well.
  • Pour the meat/rice mixture into the prepared 9x13-inch baking dish. Cover the baking dish, and bake in a 375º oven for 30 minutes, or until the rice is cooked and soft.

280g new or waxy potato , cut into cubes
2 tbsp butter
2 tbsp olive oil
1 red chilli , half sliced, half deseeded and finely chopped
1 garlic clove , chopped
1 tsp Cajun seasoning
198g can sweetcorn , drained and rinsed
200g black bean (from a can), drained and rinsed well
2 eggs
1 ripe avocado , chopped
lime wedges, soured cream and warm tortillas, to serve (optional)

Steps:

  • Cook the potatoes in boiling salted water for 5 mins, then drain and let steam-dry. Heat half the butter and oil in the pan and fry the potatoes for about 10-15 mins until golden. Add the chopped chilli, garlic, Cajun seasoning, sweetcorn and black beans, and heat through for about 5 mins, then season.
  • Keep warm in a low oven while you fry the eggs in the rest of the butter and oil until cooked to your liking. Divide the potatoes between 2 bowls and top with an egg, some chopped avocado and the sliced chilli. Serve with lime wedges, soured cream and warm tortillas, if you like.
