Steps:

  • Combine beans, water, Seasoning Mix and Pasta in large skillet.
  • Bring to boil; cover. Simmer on medium-low heat 10 to 12 min. or until pasta is tender and most of the water is absorbed. Remove from heat.
  • Stir in VELVEETA Cheese Sauce.

I got this off a box of Velveeta Cheese when I saw it made on Good Morning America. The recipe is exact, i haven't changed it. I usually buy the large block of Velveeta cheese and store any unused cheese in ziploc bags, so I'm forever searching for the recipe. It's easy and fast. My family swears it tastes just like KFC! You can also put the Macaroni and Cheese in a greased casserole dish and make a topping out of 1 sleeve of crushed Ritz Crackers and 1 stick of melted butter. Combine and then sprinkle on top of casserole. Bake in 350 degree oven till top is golden brown.

  • Spoon into 2-qt. casserole sprayed with cooking spray; sprinkle with Cheddar. Melt remaining butter; toss with cracker crumbs. Sprinkle over casserole.

1 can (14.5 oz.) diced tomatoes, drained
1 VELVEETA Fresh Packs (4 oz.), cut into 1/2-inch cubes

Steps:

  • Cook macaroni as directed on package, omitting salt.
  • Meanwhile, reserve 1/3 cup onions. Brown meat with peppers and remaining onions in Dutch oven or large deep skillet; drain. Return meat mixture to pan. Stir in beans, tomatoes and VELVEETA; cook 5 min. or until mixture is heated through and VELVEETA starts to melt, stirring occasionally.
  • Drain macaroni. Add to meat mixture; mix lightly. Top with reserved onions.

I have reduced it to six servings, but judge accordingly :)

2 (14 1/3 ounce) cans chili with beans
1 large green pepper, chopped
1 large red pepper, chopped
1 (8 1/2 ounce) package cornbread mix

Steps:

  • PREHEAT oven to 375°F Prepare shells and cheese dinner as directed on package.
  • Stir in chili and peppers. Spread into 13x9-inch baking dish.
  • Prepare the cornbread batter as directed on package; spoon evenly over chili mixture to within 1/2 inch of edges.
  • Bake 25 to 30 minutes in preheated 375 degree oven, or until top of cornbread is golden brown and wooden pick inserted in center comes out clean.
  • Serving Suggestion -- a little extra shredded cheese, or some sour cream! If you like it a little spicy, use hot chili with beans.
