8 medium Granny Smith apples, peeled, cored and sliced
1 cup granulated sugar
1 heaping tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1 cup all-purpose flour
1 cup quick-cooking oats
1 cup packed brown sugar
1/4 teaspoon baking powder
1/4 teaspoon baking soda
Pinch of kosher salt
1 stick (8 tablespoons) salted butter, melted
Ice cream or frozen custard, for serving

Steps:

  • For the apples: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch glass baking dish with butter.
  • Arrange the apple slices in the prepared baking dish in an even layer. In a bowl, mix together the granulated sugar, flour, cinnamon and salt. Sprinkle the mixture over the apples, then pour 1/2 cup water over top.
  • For the topping: In a separate bowl, mix the flour, oats, brown sugar, baking powder, baking soda and a pinch of salt. Stir while drizzling in the melted butter. Sprinkle the topping in an even layer over the apples.
  • Bake until the topping is slightly crisp and golden brown, about 43 minutes. Serve warm or at room temperature on its own, with ice cream or with frozen custard.

2 1/2 lbs apples, peeled, quartered, cored, and sliced to yield about 6 cups (about 6 medium, Granny Smith works well)
2 -3 tablespoons sugar
1/4 teaspoon ground cinnamon
1 tablespoon all-purpose flour
1 cup all-purpose flour
5 tablespoons brown sugar
2 tablespoons sugar
1/2 cup finely chopped nuts (I like pecans)
4 ounces unsalted butter, cut into small pieces and chilled

Steps:

  • Preheat oven to 350.
  • To make the filling--In a 9-inch pie pan that's 2 inches deep (or a similar baking pan), toss the apples with the sugar to taste, cinnamon, and flour.
  • To make the topping--In a medium bowl, mix together all the topping ingredients with your fingers or a pastry cutter until small pebbly pieces of butter are distributed throughout the mixture.
  • Sprinkle the entire mixture over the apples.
  • Bake until the topping is golden and the fruit is bubbling and tender, about 1 hour and 15 minute.

  • Cool slightly before serving.
  • You can make individual crisps by dividing the filling and topping among six ramekins or individual gratin dishes.

Number Of Ingredients 10

3 cups peeled, cored, and sliced apples or other fruit
1/2 teaspoon ground cinnamon
Juice of 1/2 lemon
1/3 cup brown sugar, or to taste
2 1/2 tablespoons cold unsalted butter, cut into bits, plus butter for greasing the pan
1/4 cup rolled oats
1/4 cup all-purpose flour
2 tablespoons shredded unsweetened coconut (optional)
2 tablespoons chopped nuts (optional)
Dash of salt

Steps:

  • Preheat the oven to 400°F. Toss the fruit with half the cinnamon, the lemon juice, and 1 tablespoon of the sugar and spread it in a lightly buttered 8-inch square or 9-inch round baking pan.
  • Combine all the other ingredients, including the remaining cinnamon and sugar, in a food processor and pulse a few times, then process for a few seconds more, until everything is well incorporated but not uniform. (To mix the ingredients by hand, soften the butter slightly, toss together the dry ingredients, and then work in the butter with your fingertips, a pastry blender, or a fork.)
