1 1/2 tablespoons brown sugar
2 tablespoons soy sauce
Juice of one lime
10 cubes Dorot crushed garlic (or 10 cloves of garlic, minced), divided
Freshly ground pepper to taste
2 pounds sirloin, cubed
2 tablespoons vegetable oil
1 large onion, sliced
2 scallions, sliced, to garnish

Steps:

  • In a large bowl, combine the brown sugar, soy sauce, lime juice, 8 cloves of garlic, salt and black pepper to taste. Do not go crazy with the salt, as the soy sauce is already salty! Add the beef and let it marinate for 1 hour.
  • Preheat a large wok over high heat. Add the vegetable oil and, when simmering, add the remaining 2 cloves of garlic. Once fragrant, add the beef cubes, working in 2 to 3 batches if needed. Sear on all sides, shaking the pan, until medium rare, 1 to 2 minutes. Remove the beef to a plate and reserve.
  • Toss the onions in what's left of the marinade in the bowl. Add the onions to the wok and sauté until soft and beginning to brown. Add the beef (and its juices) back to the pan and toss with the onions.
  • Remove from heat, sprinkle with sliced scallions and serve over rice or salad.

2 tablespoons oil
3 -4 cloves garlic, finely chopped
1/4 teaspoon pepper
1 red bell pepper, cut into thin short strips
1 tablespoon caster sugar
2 tablespoons fish sauce
1/2 cup beef stock
2 teaspoons cornflour
4 green onions, cut into long thin diagonal slices

Steps:

  • Combine the steak, oil, garlic, pepper and capsicum in a glass bowl- cover and refrigerate for 30 minutes.
  • Heat a wok until it is hot.
  • Add the beef mixture and stir over high heat, sprinkling with the combined sugar and fish sauce, for 2- 3 minutes.
  • Stir the stock and cornflour in a bowl to form a smooth paste.
  • Add to the beef along with the green onions and toss for a further one minute.
  • Serve with hot rice noodles.

Vietnamese Beef Grilled in Grape Leaves: Bo la Lot image

Because la lot leaves are very hard to find in the West, this recipe is usually made using grape leaves, which make an excellent substitute. Grape leaves are widely available in supermarkets and middle-eastern specialty shops. This dish is often part of the "Beef Seven Ways" ritual in Vietnamese cooking.

12 ounces ground beef
1 shallot, peeled and thinly sliced
1 large clove garlic, peeled and minced
2 tablespoons minced lemongrass from the white bulb
2 teaspoons sugar
1 tablespoon fish sauce
24 la lot leaves or small grape leaves
Bamboo skewers, soaked in water for 20 minutes and drained
Nuoc Cham, dipping sauce
5 tablespoons sugar
3 tablespoons water
1/3 cup fish sauce
1/2 cup lime or lemon juice (about 3 limes or 2 lemons)
1 large clove garlic, crushed, peeled and sliced or minced
1 or more bird's eye or Thai chiles, seeded and sliced or minced
1 shallot, peeled, thinly sliced, rinsed, and drained (optional)

Steps:

  • Mix together the beef, shallot, garlic, lemongrass, sugar and fish sauce in a bowl.
  • If using grape leaves, rinse, drain and pat them dry. Put about 2 teaspoons of filling in the center, slightly closer to the wider end. Fold the wide end over the filling, fold in the sides, and then roll up carefully, making sure the filling is completely and tightly enclosed. Repeat the process with the remaining leaves and beef mixture.
  • Depending on length of skewers, slide 3 to 5 beef rolls crosswise onto each skewer. Grill over a barbecue (make sure flames have subsided and coals are red, with white ashes) or on a well-oiled grill pan over medium-high heat, about 2 minutes per side. Serve with Nuoc Cham sauce for dipping.
  • Whisk together the sugar, water, fish sauce, and lime or lemon juice in a bowl, until the sugar is completely dissolved. Add the garlic, chile, and shallot if using, and let stand for 30 minutes before serving.

1 6 inch crusty French baguette
iceberg lettuce
2 tablespoons shredded carrots
1 1/2 tablespoons sambal oelek chili paste (amount approximate and to taste)
1 1/2 tablespoons thai sweet chili sauce (I used Mae Ploy brand)
nuoc cham sauce (recipe ID #25375)

Steps:

  • Place beef on baguette and warm in microwave, if desired.
  • On each side of bread, pour enough nuoc cham to moisten bread fairly well.
  • On top of beef, spread sambal oelek (to the amount desired).
  • Top with lettuce and a generous sprinkling of grated carrot.
  • Pour chilli sauce on top of lettuce, top with upper half of bread; serve.

1 tablespoon granulated sugar
2 tablespoons white vinegar
2 tablespoons water
1 red onion, sliced into rings
2 bunches watercress

Steps:

  • In a large bowl, combine the beef, garlic, brown sugar, 3 tablespoons of soy sauce, oyster sauce, fish sauce, and black pepper. Toss to combine. Let marinate at room temperature for 30 minutes.
  • In small bowl, combine the granulated sugar, remaining 2 tablespoons of soy sauce, white vinegar, and water. Add the red onion slices and coat the red onions in the dressing thoroughly. Set aside to soak.
  • On a platter, arrange the watercress and tomato slices.
  • Preheat a large wok or skillet over high heat, then add the vegetable oil. When the oil is shimmering, swirl the oil around in the pan. Add half of the beef cubes and sear on all sides, shaking the pan, until the meat is slightly charred and medium rare, 3-5 minutes. Set the meat aside and repeat with remaining beef.
  • Arrange the beef on the bed of watercress and tomatoes. Top with the dressed red onions and fresh cilantro.
  • Serve with domed white rice. For a full meal, serve alongside Vietnamese crepes, spring rolls, and banh mi sandwiches.

2 pounds oxtail pieces
3 pounds beef bones (shin or neck)
1/2 teaspoon salt
1 3-inch piece of ginger, split lengthwise
1 medium onion, unpeeled and halved
8 whole star anise
2 cinnamon sticks
2 large bay leaves
5 whole cloves
1 tablespoon sugar
2 teaspoons fennel seeds

Steps:

  • Place the oxtails, beef bones, salt and 14 cups cold water in a large stockpot. Set the pot over medium heat and bring slowly to a boil.
  • Meanwhile, heat a small cast-iron skillet over high heat. Place the ginger and onion, cut sides down, into the skillet and cook until charred black, about 3 minutes. Turn the pieces and cook until they are charred on all sides. Remove from the skillet and add them to the stock.
  • When the stock boils, reduce the heat and simmer, uncovered, skimming off any foam that rises to the surface. After the stock has been simmering for 30 minutes and very little foam is collecting on the surface, add the star anise, cinnamon, bay leaves, cloves and sugar. Put the fennel seeds in a tea ball or tie them in cheesecloth and add them to the stock. Continue to simmer, skimming occasionally, for about 3 * more hours.
  • Strain the stock, pass it through a fine-mesh sieve and discard the solids. Refrigerate until the fat solidifies on top of the stock, 3 to 4 hours. Remove the fat with a spoon and discard. The stock will keep refrigerated for up to 3 days.
