VIETNAMESE SANDWICH

Vietnamese Sandwich image

While teaching English in Asia the past several years, I've been lucky to exchange some delicious and authentic recipes with local people. This Vietnamese banh mi sandwich is awesome, and it is a nice break from common sandwiches. The garlic chili sauce is common in Asian sections of markets but Indonesian sambal or Korean chili paste can also be substituted. Beer or red wine is the beverage of choice for this authentic recipe of French-influenced Vietnamese cuisine.

Provided by SONNYCHIBA

Categories     World Cuisine Recipes     Asian     Vietnamese

Time 15m

Yield 4

Number Of Ingredients 9

4 boneless pork loin chops, cut 1/4 inch thick
4 (7 inch) French bread baguettes, split lengthwise
4 teaspoons mayonnaise, or to taste
1 ounce chile sauce with garlic
¼ cup fresh lime juice
1 small red onion, sliced into rings
1 medium cucumber, peeled and sliced lengthwise
2 tablespoons chopped fresh cilantro
salt and pepper to taste

Steps:

  • Preheat the oven's broiler. Place the pork chops on a broiling pan and set under the broiler. Cook for about 5 minutes, turning once, or until browned on each side.
  • Open the French rolls and spread mayonnaise on the insides. Place one of the cooked pork chops into each roll. Spread chile sauce directly on the meat. Sprinkle with a little lime juice and top with slices of onion, cucumber, cilantro, salt and pepper. Finish with another quick drizzle of lime juice.

VIETNAMESE LEMONGRASS BEEF AND NOODLE SALAD

Vietnamese Lemongrass Beef and Noodle Salad image

Bun bo xao, a zesty stir-fry of marinated beef hot from the wok paired with room temperature rice noodles, makes a satisfying main-course salad year-round. Dressed with a classic Vietnamese dipping sauce and topped with roasted peanuts, the flavors are clean, bright and restorative. Yes, this recipe calls for a lot of ingredients, but the prep is simple, and it's an easy introduction to Vietnam cooking for the uninitiated.

Time 1h

Yield 4 servings

Number Of Ingredients 24

4 tablespoons Demerara or granulated light brown sugar
3 tablespoons rice vinegar
4 tablespoons lime juice, from 2 large limes
4 tablespoons best quality fish sauce, such as Red Boat
2 garlic cloves, minced
1 1-inch length ginger, peeled and minced
1 medium-hot red chile, such as Fresno, chopped
1 hot red or green bird chile, thinly sliced
12 ounces rice vermicelli noodles
1 pound beef skirt steak or sirloin, in thin 1/4-inch slices
2 tablespoons best quality fish sauce, such as Red Boat
1 tablespoon Demerara or granulated light brown sugar
3 garlic cloves, minced
3 tablespoons finely chopped lemon grass, tender centers only
1 head lettuce, such as butter lettuce or Little Gems, tender center leaves separated
2 tablespoons vegetable oil
4 scallions, slivered
1 medium carrot, cut in 3-inch lengths, julienned (about 1 cup)
1 small cucumber, 3-inch lengths, julienned (about 1 cup)
1 3-inch length daikon radish, julienned (about 1 cup)
Mixture of cilantro sprigs, mint leaves, basil leaves and small perilla (shiso) leaves, about 3 cups
4 tablespoons crushed roasted peanuts
4 tablespoons fried shallots, available in Asian groceries (or make your own using this recipe)
Small handful bean sprouts or sunflower sprouts (optional)

Steps:

  • In a small bowl combine sugar, rice vinegar and lime juice and stir to dissolve. Add fish sauce, garlic, ginger, chiles and 1/2 cup water and stir together. Let sit for 15 minutes for flavors to meld. (May be prepared a day ahead and refrigerated.)
  • Bring a large pot of water to the boil. Add rice noodles, stir and turn off heat. Let noodles soften (5 to 8 minutes, depending on brand), then drain and rinse with cold water. Leave in colander at room temperature.
  • Meanwhile, combine beef, fish sauce, sugar, garlic and lemon grass in a bowl. Massage seasoning into beef and let sit for 15 minutes.
  • Line a serving bowl or four individual large wide soup bowls with a few lettuce leaves and top with noodles.
  • Heat the oil in a wok over high heat. When wok is nearly smoking, add beef and quickly stir-fry until lightly browned and just cooked, about 2 minutes. Work in batches if necessary so meat browns and doesn't steam. (If you do not have a wok, you may use a cast iron skillet and work in batches.)
  • Top noodles with cooked beef, scallions, carrot, cucumber and daikon. Sprinkle with herbs, crushed peanuts and fried shallots (add sprouts if using). Drizzle lightly with dipping sauce and pass remaining sauce at table.

14 EASY VIETNAMESE DINNER RECIPES - DELIGHTFUL PLATE

From delightfulplate.com
Estimated Reading Time 8 mins
  • Caramelized Pork Belly (Thit Kho) Thit kho is a great example of classic Vietnamese family food. It may take up to 2 hours to cook, but you can make it ahead the day before, or make a big batch during the weekend and freeze.
  • Steamed Fish with Ginger, Scallion and Soy Sauce (Ca Hap) By using fish fillets instead of a whole fish, the prepping and cooking process will become effortless.
  • Beef & Potato Stir-fry (Bo Xao Khoai Tay) This dish is my childhood favorite. It has a savory taste with flavorful beef and tender potato slices. We usually cook it as a main dish served with rice.
  • Grilled Pork Chops (Suon Nuong) Another restaurant-style dish you can make at home. Marinate the pork chops in the morning and then all you need to do is to grill it in the evening for dinner.
  • Fried Tofu with Scallion and Fish Sauce (Dau Ran Tam Hanh) A rustic side dish ready in 15-20 minutes. Crispy and piping hot fried tofu is dipped in scallion fish sauce mixture to soak up delicious flavors.
  • Steamed Clams with Thai Basil and Lemongrass (Ngheu Hap Sa) Many Vietnamese people love to start their dinner with a lightly cooked seafood dish that highlights the natural sweetness of the seafood.
  • Steamed Squid with Ginger and Scallion (Muc Hap) Squid is another seafood that can benefit from steaming. Just make sure you don’t overcook the squid or it will become rubbery.
  • Rotisserie Chicken (Ga Roti) Ga Roti features juicy chicken in a savory and lightly sweet sauce. You can use chicken drumsticks, thighs or whole chicken legs and marinate them in the morning.
  • Fried Eggs and Tomatoes (Trung Chien Ca Chua) This fried eggs and tomatoes is a light dish with lovely flavors to accompany any strongly-flavored main dish.
  • Shaking Beef (Bo Luc Lac) An easy and delicious one-pan meal that doesn’t require a lot of effort. You can eat it with rice, or serve it with simple salad and fries on the side.
