WALNUT CHERRY DELIGHTS

These may be frosted with an icing made from 2 cups powdered sugar, a slightly beaten egg white and 2 tablespoons maraschino cherry juice or water. You can use candied cherries in these cookies instead of the maraschinos, if you prefer.

Ingredients

1 cup all-purpose flour
⅓ cup white sugar
½ cup butter, softened
2 eggs
1 ½ cups packed brown sugar
¼ cup all-purpose flour
½ teaspoon baking powder
1 cup chopped walnuts
½ cup maraschino cherries

Steps:

Preheat oven to 350 degrees F (180 degrees C). Grease a 9 inch square pan.
Mix 1 cup flour, white sugar and butter by hand. Pat into pan. Bake for 8 - 10 minutes.
With a whisk, beat 2 eggs. Whisk in brown sugar, then add 1/4 cup flour and baking powder. Stir in nuts and cherries. Pour over baked crust.
Bake for 20 - 25 minutes more.

Ingredients

1 cup graham cracker crumbs
3/4 cup sugar
1 teaspoon baking powder
2 eggs, separated
3 ounces walnuts, chopped
1 teaspoon vanilla
1 pinch salt

Steps:

Preheat oven to 350 degrees.
Butter and flour 8 x 8 inch baking pan.
In a large mixing bowl. Mix graham crackers crumbs, sugar and baking powder.
Beat egg yolks lightly, add to the dry ingredients and stir. Stir in walnuts and vanilla. Mix well.
Beat egg whites in a separate bowl with a pinch of salt until stiff. Gently fold into the graham cracker mixture. Pour into baking pan.
Bake untill golden brown, about 25 minutes.
Let cool in pan, cut into bars.
Serve with Ice cream or Whipped Cream on top.
