HALEKULANI HOTEL COCONUT CAKE
This fabulous cake comes from the majestic Halekulani Hotel on Waikiki Beach in Honolulu, Hawaii, where it has been the hotel's signature cake for years. It's a light, creamy concoction that sings "spring." The cake is a light sponge cake, filled with pastry cream, and topped off with whipped cream. I saw this in the local Relish magazine that comes with our newspaper. I had to post it and share it with my zaar friends. ;)

Steps:
- To prepare the cake, preheat the oven to 350°F Grease and flour a 9-inch springform pan.
- To prepare the cake, sift together cake flour, 2/3 cup sugar, salt and baking powder in a small bowl. In separate bowl, combine oil, egg and water; add to flour mixture. Mix until smooth.
- Whip egg whites and cream of tartar. Gradually add 1/2 cup sugar and whip until stiff peaks form. Fold egg whites into batter until just combined.
- Pour into pan and bake about 30 minutes or until center is set. Remove from pan set aside to cool. Store in the refrigerator several hours before cutting.
- To prepare the pastry cream, combine 1 3/4 cups milk, sugar, salt and vanilla in a medium saucepan. Cook over medium-high heat until tiny bubbles form.
- Combine remaining milk with cornstarch; add eggs and beat several times. Add ½ cup hot milk mixture to egg mixture; mix well. Pour egg mixture back into milk mixture in saucepan. Cook over medium heat, stirring constantly until thick. Remove from heat and stir in butter. Scrape custard into a bowl. Cover with plastic wrap. Store in the refrigerator.
- To prepare the whipped cream, combine heavy cream and sugar in a mixing bowl and whip until stiff peaks form.
- Add 1 cup of whipped cream, amaretto and 1 1/4 cups coconut to pastry cream; stir well. Set remaining whipped cream and coconut aside.
- When cake is completely cooled, cut into three layers using a serrated knife. Place one layer on a 9-inch cake board or a serving plate. Place half the pastry cream on top and spread to edge evenly. Place second layer of cake on top of pastry cream and spread remaining pastry cream on top. Place third layer of cake on top. Frost top and sides of cake with remaining whipped cream and sprinkle with 1/2 cup coconut.

SOUR CREAM COCONUT CAKE
This is a great cake at Christmas....looks so "snowy". It is important to frost this cake while it's still warm so that the cake will absorb moisture from the frosting as it cools.

- Grease three 8" round cake pans; line bottoms of pans with wax paper. Grease and flour wax paper; set aside.
- Beat shortening at medium speed of an electric mixer until soft and creamy; gradually add sugar; beating well. Add eggs, one at a time, beating after each addition.
- Combine flours; add to shortening mixture alternately with milk, beginning and ending with the flour mixture. Mix at low speed after each addition until blended. Stir in vanilla.
- Pour batter into prepared pans. Bake at 350 degrees for 22 to 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes. Remove from pans; peel off wax paper.
- Immediately spread 1 cup frosting between each layer; spread remaining frosting on the top and sides of cake. Let cool completely.
- Frosting: Combine 2 cups sugar, frozen coconumt, sour cream and lemon extract in a medium bowl, stirring until blended.

MILE HIGH COCONUT CAKE
This is a great old fashioned, made from scratch BUTTER cake. I made it for a family gathering and all of my aunts want the recipe. I think the secret is the coconut milk, found in many grocery stores Asian food section. It is a very heavy cake. I made it once with coconut milk and butter and another time with vegetable oil and regular milk. You cannot even compare the 2!

- Heat oven to 350 degrees. Coat three 8-inch round cake pans with nonstick cooking spray and dust with flour. Set aside.
- In a medium bowl combine flour, salt and baking powder. Set aside.
- With mixer on medium speed, beat butter and granulated sugar until light and fluffy in a large bowl. Mix in coconut milk, and extract. Add flour mixture a little at a time until incorporated. Batter will be VERY heavy. Set aside.
- In a 3rd bowl, using clean dry beaters, beat egg whites on high speed until soft peaks form. Fold egg whites into batter with a spatula until no egg whites remain. The batter should now be the consistency of cake batter.
- Pour into prepared pans and bake for 40 minute or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes then remove from pan and cool completely.
- Frosting:.
- In a large bowl beat cream cheese and butter until smooth. Add confectioners' sugar and coconut extract and mix on low speed until smooth.
- Assembly:.
- Place one layer on pedestal. Spread with 1/4 cup of desired filling. Top with 2nd layer and the remaining filling. Top with last layer. Secure with skewers. Spread frosting on side and top of cake.
- Press a handful of coconut gently into side of cake. With remaining coconut, sprinkle on top of cake and chill. Garnish with raspberries etc.

EASY MELT IN YOUR MOUTH COCONUT CAKE
One of my friends shared this recipe with me and every time I make it I get "best cake ever" comments! A guaranteed easy hit every time, and the most moist cake you will ever eat!

- Bake cake according to cake box directions in a 13 x 9 pan.
- Take cake out of oven and while still hot, poke holes all over top with something the size of a small birthday candle.
- Slowly pour can of sweetened condensed milk over the top of cake making sure it doesnt all run to the sides.
- Slowly pour Coco Lopez over top of cake -- you may have to heat this up in microwave 20-30 seconds to get it liquid.
- enough to pour -- this ingredient is found in the "drink mixers" section of the grocery store.
- If you have time, cover cake and put in refrigerator overnight getting it cold.
- When you are ready to serve, spread Cool Whip on top and then sprinkle coconut over top to taste -- guaranteed to please!

CHRISTMAS COCONUT CAKE
If I don't start early on Christmas foods and such, I'll be too far behind to catch up! This is such an elegant cake. It's almost like a bare canvas, with beautiful, colors that you could place on it. Just elegant! The coconut frosting is shown below. I had a little bit of time finding the coconut extract, and found it at Michael's. If you have trouble finding it, perhaps another extract would fit the bill. Either way, it's a winner!

- Cream butter; gradually add sugar and beat 10 to 15 minutes at medium speed of electric mixer. Add eggs one at a time, beating well after each addition.
- Combine flour, baking powder, soda and salt;.
- add to cream mixture alternately with buttermilk and oil, beginning and ending with flour mixture.
- Mix well after each addition.
- Stir in flavoring.
- Pour batter into three greased and floured 9-inch round cake pans.
- Bake at 350°F for 20 to 25 minutes, or until a wooden toothpick inserted in the center comes out clean.
- Cool cake in pan for 10 minutes.
- Place on wire rack and let cool completely.
- Combine milk and flour in medium saucepan.
- Cook over medium heat, stirring constantly until mixture thickens.
- Remove saucepan from the heat, and allow mixture to cool completely.
