1 1/2 cups toasted walnuts
1 1/4 cups rolled oats
1 1/2 tablespoons maple syrup
1 tablespoon brown sugar
1 teaspoon dried sage
1 teaspoon dried thyme
3/4 teaspoon kosher salt
1/2 teaspoon dried rosemary
1/2 teaspoon cayenne
1/4 teaspoon grated nutmeg
2 pinches of crushed red pepper
3 large eggs
Freshly ground black pepper
Flavorless oil, such as canola or vegetable, for frying

Steps:

In a food processor, pulse the nuts to a coarse crumb. Add the oats, maple syrup, brown sugar, sage, thyme, salt, rosemary, cayenne, nutmeg, red pepper, eggs and some black pepper and continue to pulse just until the mixture comes together into a thick batter. There should still be some coarse bits of oats and walnuts.
Heat a generous layer of oil in a skillet over medium-high heat. Dollop 2 tablespoons of batter per patty into the skillet, allowing at least 1 inch between patties, flatten them slightly and cook until golden brown on the bottom, about 4 minutes. Flip and cook until golden brown on the other side, another 4 minutes. Transfer to a plate lined with a paper towel to soak up excess oil. Repeat with the remaining batter.

Number Of Ingredients 7

Ingredients

8 oz cream cheese, softened
2 sticks (1 cup) unsalted butter, softened
2 cups all-purpose flour
2 large eggs
1 1/2 cups packed brown sugar
2 cups chopped walnuts (8 oz)
2 to 4 mini-muffin tins

Steps:

Beat together cream cheese and butter with an electric mixer until smooth. Sift in flour and a pinch of salt and stir until mixture forms a dough. Divide dough into quarters, then chill, each wrapped in plastic wrap, at least 1 hour.
Preheat oven to 350°F.
Make 12 balls from each piece of dough. Press each ball into bottom and up sides of a mini-muffin cup to form a pastry shell. Chill until ready to fill.
Whisk together eggs, brown sugar, and a pinch of salt until blended, then stir in walnuts. Fill each pastry shell with 1 teaspoon filling.
Bake in batches in middle of oven until filling is bubbling and pastry is light brown, 25 to 30 minutes. Run a sharp knife around edges of pastries, then transfer to a rack and cool.
