6 cups pureed watermelon (...[$0.50])
4 cups lemon juice (...[$2.48])
6 cups white granulated sugar (...[$1.74])

Steps:

  • Heat all ingredients in stock pot but do not boil. Heat only to 190 degrees F. This will heat up fast so stir often and then remove from heat.
  • Prepare water bath canning equipment, mason jars, lids and rings.
  • Ladle warm concentrate into hot jars leaving 1/4 inch headspace.
  • Remove bubbles, clean rim, and place lids and rings on finger tight.
  • Process in water bath canner for 15 minutes.

4 cups freshly squeezed lemon juice
6 cups sugar

Steps:

  • In a foodprocessor, blender or bullet puree watermelon in batches. Cooking: Transfer watermelon puree to a stainless steel saucepan over medium-high heat. DO NOT BOIL.
  • Add lemon juice and sugar and stir to combine. Using a thermometer heat to 190 degrees Fahrenheit, stirring occasionally. Becausethis recipe has sugar it will get to temperature rather quickly so keep youreye on the thermometer. Remove from heat.
  • Ladle mixtureinto jars leaving 1/4 inch headspace. Wipe rim, add hot lids and tighten ringsjust finger tight. Process in water bath canner at a boil for 15 minutes.
  • To reconstitute,mix one part concentrate with one part water, tonic water or ginger ale. Adjustconcentrate to suit your taste.
  • You can use bottled lemon juice for this recipe as well!!!
  • **If you do not want to process this concentrate in canning jars, freeze the concentrate in 1 to 2 cup portions.

½ cup fresh lemon juice

Steps:

  • Place the watermelon into a blender. Cover, and puree until smooth. Strain through a fine mesh sieve.
  • Bring sugar and 1/2 cup water to a boil in a saucepan over medium-high heat until sugar dissolves, about 5 minutes. Remove from heat. Stir in 3 cups of cold water and the lemon juice. Divide the ice into 12 glasses, and scoop 2 to 3 tablespoons of watermelon puree over the ice, then top with the lemonade. Gently stir before serving.

1 large or 2 small watermelons
250ml lemon juice (from a bottle or squeeze your own)
100g golden caster sugar
1l bottle soda water
1 lime , cut into slices
small handful mint
crushed ice

Steps:

  • Cut the top off the watermelon and hollow it out using a large spoon, fishing out any pips along the way. Mash the flesh through a sieve into a bowl. Put the flesh in a blender (or use a tall jug and hand blender) with the lemon juice and sugar, whizz to a purée, then stir in the soda.
  • Heap some ice into the hollowed-out watermelon and fill it with the lemonade mixture. Serve the rest in a jug with the lime slices and mint. Have a bowl of extra crushed ice on the side so people can help themselves.

Steps:

Steps:

  • In a food processor, blender, Ninja or bullet puree watermelon in batches.
  • Transfer watermelon puree to a stainless steel saucepan over medium-high heat. DO NOT BOIL. Add lemon juice and sugar and stir to combine. Using a thermometer heat to 190 degrees Fahrenheit, stirring occasionally. Because this recipe has sugar it will get to temperature rather quickly so keep your eye on the thermometer. Remove from heat.
  • Ladle mixture into jars leaving 1/4 inch headspace. Wipe rim, add hot lids and tighten rings just finger tight. Process in water bath canner at a boil for 15 minutes.
  • To reconstitute, mix one part concentrate with one part water, tonic water or ginger ale. Adjust concentrate to suit your taste.

1 cup fresh mint leaves
1/2 cup packed light-brown sugar
1/2 medium seedless watermelon (about 9 pounds), rind removed, flesh cut into chunks
1 cup vodka (optional)

Steps:

  • Squeeze lemons into a large pitcher; add squeezed lemon quarters. Add mint and sugar; mash with a wooden spoon until mint is bruised and sugar is dissolved.
  • In a blender, puree watermelon in batches until smooth; pour through a fine-mesh sieve into pitcher (you should have about 8 cups of juice). Stir to combine. (Refrigerate, covered, up to 3 days.) Add vodka, if using; serve over ice.

But I think that this recipe is perfect. It also makes a great martini served in a sugar-rimmed glass with a garnish of watermelon wedge and a twist of lemon! Simply fabulous!

¾ cup white sugar
1 sprig rosemary, leaves stripped and chopped
2 cups lemon juice
12 cups cubed seeded watermelon

Steps:

  • Bring the water and sugar to a boil in a small saucepan over high heat. Stir in the rosemary, and set aside to steep for 1 hour.
  • Place half of the lemon juice, and half of the watermelon into a blender. Strain the rosemary syrup through a mesh strainer into the blender. Cover, and puree until smooth. Strain into a pitcher, then puree the remaining lemon juice and watermelon. Stir the lemonade before serving over ice.
