WATERMELON LOLLIPOP
Watermelon roundels soaked in thickened orange juice, pierced with toothpicks and topped with cheese slice.

Steps:
- Slice the watermelon into ½ inch thick discs.
- Heat non-stick pan, pour the orange juice into it, add salt and cook till it reduces
- Remove the seeds with the pointed end of a knife. Cut small roundels with a small cooker cutter.
- Transfer the orange juice into a bowl and let it cool down to room temperature.
- Add the watermelon roundels to the reduced orange juice and let them soak well. Keep the bowl in the refrigerator to chill.
- Cut the cheese slice into ½ inch wide strips. Cut each strips into 2 equal pieces.
- Take two 2x4 inch thermacole rectangles, keep them one over the other, wrap them with aluminium foil and keep it on a serving platter.
CHEWY WATERMELON RIND CANDY
Instead of throwing away those watermelon rinds, turn them into a sweet treat with sugar, mint, and sweet basil. If you like, you can roll the dehydrated candy pieces in coarse sugar. Eat immediately or store in the freezer for up to 1 year.

Steps:
- Cut watermelon rind into 2-inch long, 1-inch wide, and 1/2-inch thick pieces.
- Combine water, sugar, spearmint, and basil in a large pot. Bring to a rolling boil. Strain out spearmint and basil. Add watermelon rind, making sure pieces are completely immersed. Cook until rind is soft, about 5 minutes.
- Drain watermelon pieces and arrange in a single layer on dehydrator trays. Dry according to manufacturer's instructions until pieces are candied and dried, 6 to 8 hours.

- Butter two 15x10x1-in. pans; set aside. In a large heavy saucepan, combine the sugar, corn syrup, water and food coloring. Cook and stir over medium heat until sugar is dissolved. Bring to a boil. Cook, without stirring, until a candy thermometer reads 300° (hard-crack stage). , Remove from the heat; stir in flavoring. Immediately pour into prepared pans; cool. Dust with confectioners' sugar; break into pieces. Store in airtight containers.
