This Watermelon Simple Syrup is loaded with the light and refreshing flavor of fresh watermelon and it's perfect for mixing with just about any spirit! Makes 4 cups.

2 cups water
1 cup granulated sugar
1/4 teaspoon salt
1/2 of a small seedless watermelon, cut into cubes

Steps:

  • Add the water, sugar, and salt to a saucepan over medium-high heat and boil until the sugar is dissolved. Set aside to cool.
  • To make the watermelon juice, add the cubed watermelon to a blender and blend until it is pureed. You may have to do this in batches depending on the size of your blender.
  • Place a fine-mesh sieve over a large bowl and pour the puree over the sieve. Use a whisk (if desired) to hurry the watermelon through the sieve. Set the strained juice aside.
  • Add 2 cups watermelon juice to the simple syrup and stir. Discard of any extra or reserve for another use. Refrigerate the syrup for up to 4 days, shaking before each use as necessary.

8 ounces watermelon, chopped into 1 inch dice
3/4 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon salt
Club soda or seltzer

Steps:

  • In a food processor or blender, combine chopped watermelon, sugar, vanilla extract and salt. Stir to combine.
  • Puree watermelon syrup in blender. Strain into small pitcher and bowl. Refrigerate until needed.
  • Mix watermelon syrup with club soda or seltzer to desired strength for flavored soft drink.

16 oz fresh, cubed watermelon
8 oz sugar
½ oz vodka (optional - it keeps the syrup fresh much longer)

Steps:

  • Combine watermelon and sugar in a jar or a zippered plastic bag.
  • Muddle them together a bit and put the bag or jar in the fridge.
  • After 12 to 24 hours, stir up the contents until all the sugar is dissolved.
  • Strain through a metal sieve.
  • Store the watermelon syrup in a clean glass jar in the fridge.
  • Optional: add ½ oz vodka to the simple syrup to help it last as long as 4 weeks.

4 Cups Watermelon liquid
Sugar - the amount of sugar will depend on how sweet your watermelon is, I added about 1 cup sugar but you can add more or less depending on how sweet you want your watermelon syrup.

Steps:

  • In a large pot at medium high heat bring the watermelon liquid to a boil, whisk in the sugar, and turn the temperature to down medium low to let simmer until thick, stirring occasionally.
  • My watermelon syrup took over an hour to thicken up, but honestly I had a hard time keeping an eye on the pot and of course I immediately forgot about it and it boiled over - so make sure you keep an eye on it! After it boiled over a little, and made a mess, I turned it down too low and it wasn't simmering at all so it definitely took longer than it should have for this syrup to thicken.
  • Once thick, let cool, and serve over pancakes or vanilla ice cream or anything else you can think of, or store it in an airtight container in your refrigerator for up to a week.

1/4 cups large watermelon (about 3 when cubed)
1/2 cup water
1/4 cup sugar
1 tablespoon lemon juice
1 cup ice
8 leaves mint
1/4 lime (sliced)
1 oz watermelon syrup
1 oz white rum
soda water to dop

Steps:

  • Slice out the flesh of the watermelon and chop it into small chunks. Place it in a saucepan and pour in the water and sugar.
  • Cook over a medium heat for 15 minutes, until the watermelon has almost disintegrated. Use a potato masher or the back of a fork to mash any stubborn bits of watermelon that aren't breaking down.
  • Leave to simmer for 10-15 minutes or until the syrup is fairly thick and the liquid has reduced greatly.
  • Sieve it into a bowl and stir in the lemon juice. Pour into a jar, leave to cool to room temperature then store in the fridge.
  • Muddle the ice, mint leaves and lime in the bottom of a glass.
  • Pour over the watermelon syrup and white rum.
  • Top with soda water and serve.

  • Remove the pulp from the juice either with a strainer or by letting the pulp settle and pouring off the juice with a spoon holding back the pulp.
  • Add the juice (aprox 2 – 3 cups) to 1 cup of brown sugar in a sauce pan and simmer over medium high until a rolling simmer and continue to cook at least 35 minutes, up to an hour. The longer, the thicker it will get. Be sure to keep an eye on it. If it gets too hot it will boil over.
