WEETABIX CAKE
This is a great one for the kids to help with as they love crushing the Weetabix...

Steps:
- Measure out all the dried ingredients into a large bowl
- Pour in the milk and egg and mix well (the mixture will look like a lumpy batter)
- Pour the mixture into a greased and lined loaf tin
- Bake at 130'C/Gas mark 3 for around 1hr 15 minutes, until it is firm to touch, golden brown and a skewer or knife comes out clean
- Once cooked, turn out of the tin onto a wire rack and remove the greaseproof paper
- Cut into slices when cool

Steps:
- Place the Weetabix, sugar, raisins and milk in a large bowl.
- Let the ingredients soak for at least an hour at room temperature. Alternatively, place in the fridge to soak overnight.
- Preheat the oven to 180°C / fan 160°C / 355°F / gas mark 4.
- Grease and flour a 900g (2lb) loaf tin. Set aside.
- Add the egg to the bowl and mix.
- Fold in the flour.
- Tip the contents into the loaf tin and bake for 1 hour, or until cooked, which means a skewer has to come out clean.
- Tip the cake out and leave to cool on a wire rack.
- Serve sliced with a cup of tea. Enjoy!

- Preheat oven to 180
- Put weetabix and sultanas in a bowl, pour over milk and water and leave to soak up all liquid. Stir in mixed spice, flour, sweetener and beaten egg
- Spoon mixture into lined loaf tin. Bake for 1hour 15 mins
- Let cool then cut into 12 slices.
WEETABIX CAKE
This is so simple, tasty, cheap AND low in fat that I'm really surprised that it isnt already on here! Instead of sultanas, You can add anything you want, mixed fruit, choc chips.. anything that takes your fancy!! The sultana version tastes like fruit loaf... yum!

Steps:
- Line a 9x9 container with Weetabix. Top with Weetabix and press gently with a fork to form a biscuit base texture.
- In a separate small bowl, mix the yogurt with cream cheese. Pour mixture over Weetabix and shake the container to smooth.
- If using, swirl in the chocolate spread using the edge of a butter knife or chopstick.
- Top with fresh berries and serve.

WEETABIX CHOCOLATE SQUARES
Quick cheap and addictive, converted from a New Zealand recipe, Great traybake or cheap biscuit tin hit. Only slightly more sophisticated than rice crispie cakes but a whole lot nicer. And this version is Vegan!

Steps:
- Pop the oven on; 180 c or Gas 4. Then mix all the dry ingredients together; crumbled Weetabix, Flour, Sugar, cocoa powder, coconut in a bowl.
- Melt the margarine and add the vanilla essence over a low heat
- While the margarine is melting line a tray with baking parchment. The dimensions don't really matter but i use a square 9 inch or 22 cm tray which works well
- Once the margarine mix has melted stir it into the dry ingredients and combine until completely mixed.
- Place the mixture into the baking tray , pressing down into corners and ensuring the mix is flat. Place in oven for 20 minutes.
- Allow to cool for an hour then melt the icing ingredients. Spread evenly across the surface. When it is set cut it into 24 squares. Try one, and then have another as they are so nice and you have 23 left so another won't be missed
