Weight Watchers Asian Style Salad is a wonderful recipe with a delicious dressing that is low in points.

1 Tbsp Hoisin Sauce
1 Tbsp lime juice
1 Tbsp honey
¼ tsp Asian sesame oil (dark)
¼ tsp ground ginger
Lettuce
Thinly sliced cucumber
Cherry tomatoes
Radishes (thinly sliced)

Steps:

  • Combine dressing ingredients in a small bowl and whisk together until well combined.
  • Chop the veggies. Place veggies in a serving bowl and drizzle with dressing.

2 1/2 cups vegetable broth
1 cup millet, uncooked
1 cup snow peas, chopped
1 (5 ounce) can water chestnuts, drained, sliced
1 (14 ounce) can bamboo shoots, drained
4 medium scallions, chopped
1 cup carrot, grated
1/4 cup rice vinegar
3 tablespoons soy sauce
2 teaspoons sugar
3/4 teaspoon black pepper
1/4 cup peanut oil

Steps:

  • In a medium saucepan, bring broth to a boil. Add millet and simmer 15 minutes. Remove pan from heat, cover and let sit 10 minutes.
  • In a large mixing bowl, thoroughly combine snow peas, water chestnuts, bamboo shoots, scallions and carrots. Fluff cooked millet with a fork and then add it to vegetable mixture.
  • In a separate bowl, combine rice vinegar, soy sauce, sugar and pepper; whisk in peanut oil.
  • Pour dressing over millet mixture and stir until well combined. Chill at least 2 hours and for the best taste, eat the same day. Yields about 3/4 cup per serving.

  • In a small saucepan, combine broth and quinoa; bring to a boil over high heat. Reduce heat to low; cover and simmer for 10 minutes.
  • Meanwhile, to make dressing, in a small bowl, whisk together vinegar, marmalade, oil, ginger and salt; set aside.
  • After quinoa has cooked for 10 minutes, toss in snap peas to partially steam them; cover and simmer until most of liquid has been absorbed, about 5 to 6 minutes.
  • Remove pan from heat and stir in carrots, cabbage, peppers and dressing; mix to thoroughly combine. Garnish with cilantro, scallions and sesame seeds. Serve warm, room temperature or chilled. Yields about 1 heaping cup per serving.

  • In a large bowl, combine garlic, vinegar, soy sauce, oil and hoisin sauce; add steak. Marinate in refrigerator for 2 to 4 hours, or up to overnight. Remove steak to a plate; reserve marinade.
  • Preheat grill or broiler. Grill or broil steak for 8 minutes on each side for medium, or longer until desired degree of doneness. Remove steak and slice into thin strips.
  • Meanwhile, pour reserved marinade into a small saucepan. Bring to a boil; cook, stirring occasionally, 1 minute more.
  • To serve, place 2 cups of greens on each of 4 plates. Top each with about 3 ounces of steak, 1/4 cup of oranges and 1 heaping tablespoon of noodles; drizzle each salad with about 1 1/2 tablespoons of cooked and cooled marinade. Yields 1 salad per serving.
