Steps:

  • Stir together all the ingredients except the chicken in a small bowl.
  • Spray a nonstick ridged grill pan with nonstick spray and set over medium heat. Brush the sauce on both sides of the chicken. Place the chicken on the pan and cook just until nicely glazed and heated through, about 5 minutes on each side. Yields 1 chicken breast per serving.

½ cup ketchup
2 tbsp apricot jam (or peach jam)
2 tbsp onion (finely chopped)
1 tsp Worcestershire sauce
2 tbsp white vinegar
⅛ tsp garlic powder
1½ tsp chili powder
4 (6 oz each) bone-in skinless chicken breast

Steps:

  • In a small saucepan, add ketchup, jam, onion, Worcestershire sauce, vinegar, garlic powder, and chili powder. Stir to mix well.
  • Bring to a boil, reduce heat, and simmer for 5 minutes uncovered.
  • Reserve ½ cup of the prepared sauce, and keep it warm for serving later, and transfer the rest to a small bowl to take to the grill.
  • Prepare grill rack by spraying with Pam cooking spray. Heat grill to medium/high heat - approx 375° - 400°
  • Put the chicken on the prepared grill with the bone side up. Cover and grill for 8 minutes. Turn chicken over, and grill another 8 minutes, or until chicken is fully cooked. Coat all sides with barbecue sauce.
  • Serve with the previously prepared reserved ½ cup of barbecue sauce.

0.5 cup(s) Barbecue sauce
8 cup(s) Water warm

Steps:

  • Whisk the salt into the warm water in a very large bowl until salt dissolves. Allow mixture to cool to room temperature, about 30 minutes.
  • Submerge chicken in cooled brine. Refrigerate 1 hour.
  • Off heat, coat grill with cooking spray. Prepare gas grill for medium-high, indirect cooking (barbecuing) or build a well-ashed, medium-high-heat charcoal bed in a charcoal grill and rake the coals to the sides of the cooking grate.
  • Remove chicken from salt brine; rinse them and pat dry. Place chicken bone-side down on grill grate to the side of any heat source, not directly over the heat. Cover grill and barbecue 15 minutes.
  • Brush chicken breasts with barbecue sauce, cover grill and continue cooking until an instant-read meat thermometer inserted into the thickest part of one breast registers 165°F, about 15 minutes more (and less for boneless chicken). Transfer chicken to a cutting board and let stand for 5 minutes to reincorporate any juices before serving.

16 ounces chicken, cut into small pieces
6 tablespoons barbecue sauce (your favorite)
1/4 cup shredded lowfat mozzarella cheese

1/2 cup regular shredded cheddar cheese
1/2 large red onion

Steps:

  • Preheat the oven to 450 degrees. Dice the onion and sauté the onion with 2 of the tablespoons of BBQ sauce. Add chicken and cook until chicken is cooked through.
  • Top your Boboli pizza with the remaining BBQ sauce, fat free cheddar, low fat mozzarella, onion chicken mixture, then the regular cheddar. Bake for approximately 10 minutes.
