8 (6 inch) flour tortillas
1 cup monterey jack and cheddar cheese blend, shredded

Steps:

  • Preheat grill or grill pan to medium.
  • Place half of the tortillas on the grill, and drop a quarter-cup of cheese in the center of each. Spread cheese as close to edges as possible.* Place a second tortilla on top of each.
  • Grill until bottom tortilla is lightly browned and cheese begins to melt, about 1-2 minutes. Flip and continue cooking until browned on the other side.
  • Cut into quarters and serve with salsa, sour cream, and guacamole.
  • *Optional: Add grilled chicken or shrimp and/or sauteed onions and peppers at this step. Both will add flavor and texture, although the recipe is complete without them.

1 pound bulk pork breakfast sausage (such as Jimmy Dean®)
cooking spray
6 eggs
¼ cup milk
½ pound shredded Cheddar cheese (such as Kraft®)
¼ cup butter
24 flour tortillas, at room temperature

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Let sausage cool.
  • Spray a large skillet with cooking spray; warm over medium-high heat. Beat eggs with milk in a bowl. Pour into the skillet; cook and stir until eggs are set, about 5 minutes. Set aside to cool.
  • Spread butter over 1 side of each tortilla. Heat a skillet over medium heat. Place a tortilla, buttered-side down, in the skillet. Top with a layer each of the sausage, eggs, then cheese. Top with another tortilla, buttered-side up. Cook until golden brown on both sides, 2 to 3 minutes per side. Transfer to a plate. Repeat with remaining tortillas and filling.
  • Slice quesadillas into quarters. Serve.

adobo seasoning to taste
12 (10 inch) flour tortillas
1 ½ cups shredded Mexican cheese blend
1 onion, chopped
1 (6 ounce) can sliced black olives, drained
1 (7 ounce) can diced green chilies, drained

Steps:

  • Place the chicken on a plate, and sprinkle with adobo seasoning on both sides. Let it marinate for 15 minutes.
  • Heat grill for medium-high heat.
  • Lightly oil the grill grate. Place chicken on grill, and cook for 10 minutes per side, or until juices run clear. Remove chicken from grill, and cut into bite-size pieces.

40 inches flour tortillas
1 (19 ounce) can kidney beans, rinsed and drained
1 cup salsa
4 green onions, chopped
1/4 cup green olives, chopped
2 tablespoons fresh coriander or 2 tablespoons parsley, chopped
1 1/3 cups reduced-fat extra sharp cheddar cheese or 1 1/3 cups extra-sharp cheddar cheese, shredded

Steps:

  • In a bowl, mash beans along with 1/2 cup of the salsa with a potato masher.
  • Spread mixture evenly over the 4 tortillas leaving a 1/2 inch border.
  • In this order sprinkle mixture with onions, olives, coriander and, finally, cheese.
  • Fold tortillas over and press to seal.
  • Place on greased grill over medium-high heat and cook, turning halfway through, for 8 tp 10 minutes or until browned and crisped.
  • Garnish with rest of salsa.

1 cup egg substitute
6 whole wheat tortillas (8 inches)
1 cup shredded reduced-fat cheddar cheese
3 turkey bacon strips, diced and cooked
6 tablespoons salsa
6 tablespoons fat-free sour cream

Steps:

  • In a small bowl, whisk eggs and egg substitute. Coat a large skillet with cooking spray. Add egg mixture; cook and stir over medium heat until completely set., Heat another large nonstick skillet coated with cooking spray; add one tortilla. Top with 1/3 cup cheese, scant 2 tablespoons bacon, 1 cup egg mixture and one tortilla.   • While the smokies are grilling, add 1 tablespoon of butter to a frying pan and allow it to melt. Add the onion and bell pepper and sauté for a 5 minutes, or until softened. Remove the softened vegetables to a plate and add the second tablespoon to the pan, placing it back over the heat. In a small bowl, whisk together the eggs and milk with a fork. Empty the eggs into the pan and stir from time to time with a spatula, until the eggs are cooked and fluffy. Stir in the diced green onion to the eggs.
  • On one half of a tortilla, sprinkle a handful of cheddar and mozzarella cheese. Add a quarter of the onions and peppers, a quarter of the scrambled eggs, and top with 2 smokie halves. Add another handful of cheese, scattering it around. Fold the bare half of the tortilla gently over the loaded up half and carefully place the quesadilla back on the grill, flipping it over after a few minutes and cooking for another few minutes, until the cheese if melty. Cut in half and serve immediately, with sour cream and salsa.
