RAW FLAX-TOMATO CRACKERS (DEHYDRATED)
I bought a bag of raw crackers at my local health food store and thought, "I can make these" so I gave them a try and I think the finished product was pretty good. At least my DH thought they were.

Steps:
- Put all the ingredients except the soaked flax into a food processor.
- Process until well combined.
- Removed the mixture into a bowl and using a small hand mixer on low mix the flax seeds into the tomato mixture. You want the flax seeds in tact.
- Spoon the mixture onto the teflex sheets of your dehydrator and using an off set spatula spread the mixture about 1/8 inch thick to within 1 inch of the edges. You don't want it too thick or thin. Experiment with this part to your likeing. I made it too thin at first and the crackers were very brittle and hard to remove from the teflex sheet. Do this until you use up the mixture.
- Dehydrate for at least 8-12 hours at about 110'F.
- Its very dry where I live so 8 hours was enough. You should flip these over at some point as well and dry for another 8-12 hours if necessary.
- As you make these again and again you can change the herbs for a different taste.
- These would be delicious with a slice of tomato or avocado. You could also crumble them up for a nice topping over a green salad.

- Soak sunflower seeds in water for 4 hours. Soak sun-dried tomatoes for 3 hours.
- Grind flax into coarse powder.
- Process sunflower seeds, celery, sun-dried tomatoes, dates, jalapeno pepper, olive oil, and salt in food processor.
- Add tomato, basil and ground flax and pulse until well-mixed.
- Spread mixture about 1/4-inch thick onto dehydrator trays with nonstick sheets.
- Dehydrate at 145F for 2 hours.
- Cut into cracker-sized pieces.
- Turn over and dehydrate at 115F for an additional 8 hours.

- INGREDIENTS and Equipment. 1 cup flax seeds (ground optional for better nutrient digestion) soaked in 2 1/2 cups filtered water 1/4 cup chia seeds soaked in 1 1/4 cup filtered water 1/2 cup almonds raw (soaked and peeled optional) 1 1/2 cups cashews raw 1 cup sunflower seeds raw 1/2 cup pumpkin seeds raw 1 large or 2 medium red bell peppers large dice 1 medium red onion half large dice half small dice 2-3 cloves garlic 1 large lemon juiced 4 Tablespoons nutritional yeast 1 Tablespoon apple cider vinegar 1 teaspoon salt 1 bunch leafy greens chopped small 10-15 large basil leaves chopped small 1 cup tomatoes medium dice 3 green onions small dice 7-10 sheets nori seaweed Equipment Food processor Rubber spatula or tool for spreading Dehydrator.
- Soak Seeds. Soak flax seeds and chia seeds in water separately. Cover and let stand for 10-24 hours on counter top.
- Onion and Garlic. Cut onion in half. Roughly chop half and small dice the other half. Add rough chop to the food processor saving small diced onion for later.
- Food Processor. Add the cashews, lemon juice, apple cider vinegar, nutritional yeast and salt to the bell pepper, onion and garlic already in the food processor.
- Combine. Combine the vegetable and nut mixture with the seed slurry until thoroughly mixed. Add the sunflower and pumpkin seeds and mix well. Add the remaining ingredients saving the tomatoes for last.
- Seaweed. Take your nori sheets and cut them in half. Lay the rough side up on your dehydrator. Be sure to do the next steps on your dehydrator trays because you will not be able to move them one assembled.
