1 1/4 lbs pork tenderloin
2 tablespoons Dijon mustard
3 tablespoons maple syrup (( divided)
1 1/2 teaspoons fresh rosemary (( chopped)
1/4 teaspoon salt
1 dash pepper
2 medium apples (Granny Smith( peeled & in 16 wedge)

Steps:

  • Preheat oven to 425ºF.
  • Trim fat from pork. Place pork on a broiler pan coated with cooking spray.
  • Combine mustard, 2 tbsp maple syrup, rosemary, salt and pepper in small bowl; brush over pork.
  • Insert meat thermometer into thickest part of pork. Bake at 425ºF for 25 minutes or until thermometer registers 160ºF.
  • While pork is baking, heat nonstick skillet over medium-high heat untilpar hot. Add apples, and saute 5 minutes or until lightly browned. Reduce heat to low, and add 4 tbsp maple syrup.
  • Simmer 10 minutes or until apples are tender, stirring occasionally.
  • Cut pork crosswise into slices; spoon cooked apples over pork.

1 lb pork tenderloin
1/4 cup Dijon mustard or 1/4 cup spicy brown mustard
2 tablespoons maple syrup
1 teaspoon dried rosemary leaves or 1/4 teaspoon ground rosemary
1/2 teaspoon salt
1/4 teaspoon pepper
8 granny smith apples
1/2 cup maple syrup
2 teaspoons cornstarch
2 teaspoons sugar
1 teaspoon cinnamon

Steps:

  • Preheat oven to 425. Place pork on a broiler pan coated with cooking spray.
  • Combine mustard, 2 tablespoons syrup, rosemary, salt, and pepper in a small bowl. Pour half of it over pork and spread with pastry brush, being mindful not to place the brush back into the mustard mixture (in order to avoid contaminating it in case you want extra sauce for dipping).
  • Bake for 30-40 minute or until internal temperature reaches 160 (meat should be slightly pink).
  • Meanwhile, slice and peel apples.
  • Heat a large skillet over med-high heat. Saute apples (no oil or spray needed) for about 5 minute or until lightly browned.
  • Reduce heat to low. Combine syrup, cornstarch, sugar, and cinnamon and add to apples. Simmer 10 minute or until apples are tender, stirring occasionally.
  • Excellent served with a side of potatoes and a salad! Enjoy!

1/4 cup mango chutney
1 tablespoon dark rum
2 teaspoons cinnamon
1/2 teaspoon ground allspice
3/4 teaspoon salt
1 lb pork tenderloin

Steps:

  • Spray the grill with nonstick cooking spray. Preheat the grill to medium-high or prepare a medium-high fire.
  • To make the glaze, stir together the chutney and the rum in a cup.
  • To make the rub, combine the cinnamon, allspice and salt in a cup. Spread the rub all over the pork, then lightly spray with nonstick spray. Place the tenderloin on the grill rack and grill, turning, 10 minutes.
  • Continue to grill the pork, turning and brushing with the glaze, until pork reaches 160 F (70 C). Transfer to a cutting board and let rest for 5 minutes. Cut into 12 slices.

3 tablespoons dijon-style mustard
2 tablespoons maple syrup
2 tablespoons green onions, sliced
2 teaspoons orange rind, finely shredded

Steps:

  • Preheat grill to medium.
  • Trim fat from chops if necessary and season with pepper (and salt if you like).
  • In a small bowl, stir together mustard, syrup, onion and orange peel. Set aside.
  • Grill chops 12-15 minutes until done. Turn once and brush with the sauce mixture during the last 5 minutes of grilling.

1 large pork tenderloin, silverskin removed
1/2 teaspoon black pepper, to taste
1/2 teaspoon sea salt
1 1/2 tablespoons olive oil
1 tablespoon ghee butter (substitute clarified butter)
1/2 cup red onion, diced
2 large garlic cloves, pressed
1/2 tablespoon fresh ginger, minced
1 tablespoon rosemary, chopped (substitute 1 tsp. dry rosemary)
1/4 cup dry white wine
1/2 cup maple syrup
3 tablespoons Dijon mustard
1/4 teaspoon cayenne pepper (to taste)

Steps:

  • Season pork with black pepper; set aside. In an oven-proof skillet over medium-high heat, add oil. When hot, place pork and cook on one side until brown. Flip and transfer in a 375ºF preheated oven; cook for 18-22 minutes depending on the size of the loin. When internal temperature reaches 140-145ºF, remove from the heat and place tenderloin on a board with a folded sheet of aluminum on top to keep warm.
  • Return skillet on the stove and remove excess oil. Add clarified butter and turn the heat to medium. When hot, add onion and sauté for 2 minutes. Add garlic, ginger and rosemary; sauté for 1 minute. Pour white wine to deglaze the bottom of the pan, scraping any brown bits.
  • When liquid is half reduced, add maple syrup, mustard and cayenne pepper; stir and cook the sauce down until turns into syrupy texture, about 8 minutes. Spoon it over the pork. 2 servings.
