This is a very simple recipe for a delicious and swiftly made dessert in the "trifle" family. It originates from 18th century Scotland, when the word "whim-wham" was used to describe something light and fanciful.

1 ounce butter
2 ounces blanched almonds
1 ounce sugar
30 sponge cake fingers (or equivalent sponge cake)
5 fluid ounces sweet sherry
4 tablespoons brandy
1 large orange, zest and juice of
10 fluid ounces double cream
11 fluid ounces plain yogurt

Steps:

  • Melt the butter in a heavy-based frying pan and fry the almonds until golden brown.
  • Stir in the sugar and cook for 1 minute, stirring continuously, until the sugar dissolves and the almonds are well coated.
  • Tip on to a greased baking sheet and leave to cool.
  • About 30 minutes before ready to serve, cover the bottom of a serving bowl with broken sponge fingers or sponge cake.
  • Pour the sherry, brandy and orange zest and juice over the sponge and leave to soak for 30 minutes.
  • Whip the cream until it just holds its shape, and then gently fold in the yogurt.
  • Spoon the mixture on top of the sponge.
  • Roughly chop the almonds, sprinkle on top and serve immediately.

18th Century Scottish Whim Wham - Brandy and Sherry Trifle image

This is a very simple recipe for a delicious and swiftly made trifle. It originates from the 18th century, when the word whim-wham was used to describe something light and fanciful. It is quite boozy, and you might want to take a break before driving!! You can add fresh fruit to this if you like - it is not traditional, but I like to add raspberries when they are in season.

25 g butter
50 g blanched almonds
25 g sugar
30 trifle sponge cake fingers
150 ml sweet sherry
60 ml brandy
1 orange, juice and rind of, finely grated large
300 ml fresh double cream
300 g plain yogurt

Steps:

  • 1. Melt the butter in a heavy-based frying pan and fry the almonds until golden brown. Stir in the sugar and cook for 1 minute, stirring continuously, until the sugar dissolves and the almonds are well coated. Tip on to a greased baking sheet and leave to cool.

Wham Salad image

This is a vegetarian version of ham salad for sandwiches or to use in a green salad. I got the recipe from the website for vegetarian food products, for the Worthington, Loma Linda and Cedar Lake brands of imitation meat products. Although we do eat meat, we love these recipes as well. I think you will like them too if you try them. Make sure you don't chop ingredients too fine or it won't mix well and it will be too gooey. You can find these meatless products in a natural health food store or online through vegefood.com The cooking time is the chilling time.

Number Of Ingredients 7

6 -8 slices Worthington Wham vegetable protein slices, cut into cubes (a vegetarian meatless product. They come sliced like lunch meat and are frozen. This particular one )
2 tablespoons mayonnaise
1 small onion, finely chopped
2 tablespoons dill pickle relish (I use the sweet pickle relish because I like it better) or 2 tablespoons sweet pickle relish, whichever you like best (I use the sweet pickle relish because I like it better)
2 celery, ribs sliced thinly (but not too thin)
3 hard-boiled eggs, chopped
1/2 cup sliced black olives

Steps:

  • Chop "Wham" like you would ham for a salad.
  • Put "wham" in a bowl.
  • Add other ingredients and mix well.
  • Refrigerate until chilled and eat right away.
  • Can eat in a sandwich with your favorite bread or in a green salad.
